"This recipe uses shop bought salsa to make a really delicious slow-cooked shredded chicken and black-bean Mexican style dish.

I had little faith that putting 5 ingredients into the slow cooker would make something that I’d want to do again, but thought I’d give it a try and it was worth the experiment.

🌈𝑬𝒎𝒑𝒍𝒐𝒚𝒆𝒆 𝒐𝒇 𝒕𝒉𝒆 𝑴𝒐𝒏𝒕𝒉 - 𝑵𝒐𝒗𝒆𝒎𝒃𝒆𝒓🦢

Our previous winner Natalie has kindly nominated the following person for November:

"This person has faced some challenges over the recent months, due to staff changes she has also had to manage an increased workload but she always comes into the office smiling and shows true resilience.

I also want to acknowledge the kindness this person has shown to a few patients in particular, who have struggled with their mental health. She has gone above and beyond her role by providing a safe space for them to talk when needed.

On one occasion she consciously made the effort to contact a patient on the day he had an interview, motivating him to get up and showered. This small task felt like a big achievement to the patient and had a positive impact on the rest of his day.
