Wings with a garlic , lemon juice and zest , salt and pepper mayo

Jamaican jerk chicken & creamed corn pizza ,
Jerk chicken marinated for 24 hours , creamed corn (corn , cream , Parmesan, chilli , coriander, salt pepper ), mozzarella, spring onion, coriander!!

A family gathering always calls for CHEESECAKE right???

So the cheesecake making virgin opted to make a Malteser cheesecake. Using a soft cream cheese and double cream mix, scattering chopped malteser bar chunks throughout. The base was a duo of hobnobs and digestive biscuits, topped off with classic malteser balls.
I however decided to do one of my favourite baked cheesecakes.... White Chocolate, mascarpone & pistachios. The digestive base crumb was combined with melted white chocolate and left to set in the fridge for 20 mins. Meanwhile the cheesecake mixture consisted of mascarpone cheese, full fat yoghurt, caster sugar, the zest of one lemon, the juice of half the lemon, 3 eggs and half a teaspoon of vanilla bean paste. Electric whisked until smooth, this glossy mixed was then poured on top of the biscuit base and in the oven for around 45mins until the cheesecake obtained a slight wobble in the middle. Once completely cooled the cheesecake was dusted with icing sugar and scattered with chopped pistachios.

Now I know what your thinking πŸ’­......yeah that all seems pretty straight forward πŸ‘πŸ½
Trust me it was compared to transporting the bloody things in the car πŸš—πŸ’¨πŸ™ŒπŸ½...one in the footwell, feet anchored on the plate and the other in my hand.... numb fingers from gripping the sliding metal tin against my slate plate.

We made them, stressfully transported them and the family demolished them....it’s as simple as that!!! πŸ‘πŸ½

Me???.....um.....I’m sweet most of the time and next level sour if you catch me on a bad day 😜
This Sweet’n’Sour chicken dish promises a crispy chinese 5 spice battered chicken, coated in a sharp, sweet and fruity sauce.

Tonight we cooked up a delicious soc eye salmon side , salmon at its best , the natural red colour and tasty flavour meant we wanted to keep the cooking of the fish simple, so we could taste the fish not mask it with too many flavours !!

Baked Soc Eye Salmon (olive oil, salt n pepper) sticky rice, Spicy Carrot Puree (with corriander, chilli and lime cooked in stock) griddled asparagus, tenderstem & sugar snap peas !!! A lovely meal , with great flavours in the purΓ©e to complement the fish brilliantly !!

Now it’s Netflix N Chill time πŸ‘πŸ†πŸ˜

Inspired by a recent family visit to Gordon Ramseys Street Pizza in Battersea, we decided to do our own take on our favourite pizza of the day which was -
corn & chorizo (corn puree , chorozo, pulled chicken, mozzarella, spring onion & corriander)

It was probably the best pizza we had both eaten, great flavours that complemented one another perfectly, and not overloaded with toppings,meaning you cannot distinguish flavours and also end up with a greasy/soggy pizza base!!

So , we decided to create our own

We made -

Jerk chicken (marinaded for 2 days), Creamed Corn Puree (with chilli & corriander ), mozzarella , spring onions, Chilli & Corriander

And did you know dough, we also made Garlic bread, and a second pizza (which wasn’t as good as the first dough 🀣)

Chorizo, mozzarella, cheese , red onion, tomato sauce (passata & tomato puree)

As its Saturday night we thought we would do a little experimenting , but instead of going dirty as its cheat day today we kept things clean (in the kitchen anyway) and opted for a healthy dish , and some playing around with foods (plating) !!

Here we have -

Cod loin pan fried in butter and garlic (salt & pepper), potato fondant (cooked to absolute perfection )with minted pea puree, parsnip and nutmeg puree, roasted tendersweet carrots , griddles asparagus, pepperito peppers & griddled red spring onion !

This is the first time we have delved into the world of purees , and have to say with great success!!

This page is not just about our cooking , we will share with you cocktails, wines , places we eat out, anything food related that we enjoy !!

I am very excited to be staring this next post with you !!! Yesterday I met up with 2 old friends, to eat, and catch up ,
and my friend Joe had cooked an absolutely sensational 6 course meal for us !!

Now I cannot emphasise enough how great the food was, not only was it the most incredible food I’ve ever eaten, but every element of these dishes was absolutely spot on , not one part lacked anything. The technical skills used to pull this off blew my mind, stocks that took 3 days to make ,and the experience for me was the best food experience of my life !!
And so now I’m sharing it with you !!!

Course 1 of 6

Scollops with pea puree , cispy palma ham & pea shoots and baked scallop roe seasoning

Course 2

Braised monkfish cheek, mushrooms,
Potato, and truffle butter sauce

Course 3

Featherblade of beef, fondant potato, roasted onion puree , and potato glass

Course 4

Sticky toffe pudding with clotted cream

Course 5

Chocolate brownie , (with a blue Berry something that ive forgot the name of ) a brownie crumble,

Course 6

Ice cream with hazelnut and baked white chocolate served on a crumb (ive also forgot ) and an edible flower

The whole experience blew my mind !! And I have to say a massive thankyou to my good friend Joe , a food experience I think will be hard to beat , and I will remember forever !!!please go and check him out on fb
