During olive harvesting :
✔We ensure it takes place at the appropriate stage of ripeness, depending on whether the olives are intended for table consumption or olive oil production, to guarantee a higher quality product.
✔We take care not to damage the branches of the trees and avoid stepping on the olives that have fallen onto the nets.
✔For olive oil production, we transport the olives to the mill as soon as possible to obtain olive oil with superior quality characteristics.

The annual growth cycle of the olive tree includes three main phases: dormancy, growth, and fruiting.
1. Dormancy: Usually in winter, when the olives enter a state of rest.
2. Growth: With the arrival of spring, olives begin to develop new shoots and leaves.
3. Fruiting: In summer, flowers appear and fruits start to develop, with harvesting taking place in autumn.
This cycle is influenced by weather conditions and the care of the tree.
