Pasta is associated by many as the enemy. This is probably because in its refined form it can be difficult to digest and large portion sizes spike blood sugars and cause energy slumps...
Although pasta is a carbohydrate and is an important source of energy for our body, it should not be seen as the main dish.....Refined white pasta is a staple in many houses and kids find it pretty appealing.. The refining process removes most of the nutritional qualities of pasta and the lack of fibre contributes to poor digestion.
Opting for wholegrain pastas boosts the nutritional value of meals and has a low glycaemic index. I opt for gluten free pastas as my daughter has a gluten sensitivity... Although I switch between mung bean, chickpea and lentil pasta it is the brown rice pasta that resembles regular pasta the most as it holds its consistency when cooked....
So.....Do not view pasta as the main dish anymore...... Carbohydrates should make up 25% of our plate it can be bulked up with 50% vegetables and 25% protein....this not only provides our body with adequate fuel but also increases the nutritional value and colour of one of favourite dishes....... Meatballs with sweet peppers, spinach, tomatoes and pasta........
