Noodle broth for early dinner. 🍲
I had some left over satay dip from yesterday so decided to make a broth.
I fried sliced garlic in coconut oil, added 500ml veg stock (water & 2 tsp ), 2 tsp Miso paste, 1 tsp tomato paste, fresh coriander, 2 tbsp satay dip, juice of 1/2 a lime.
I let the broth simmer for 10 mins, I fried chestnut mushrooms in sesame oil with maple syrup, tamari & sesame seeds.
I added rice noodles to the broth for 10 mins to cook along with some kale.
Served in a bowl topped with crumbled cooked .ie tofu, sesame mushrooms, kale chips, raw carrot, fresh coriander, a squeeze of lime and a drizzle of salsa Macha.
