Chocolate coconut protein bars

80g ground oats (use gluten free if preferred)
70g chocolate or vanilla flavour whey or plant-based protein powder
8g unsweetened cocoa powder
25g desiccated coconut
25g flaxseed
55g smooth nut butter of your choice
35g raisins, chopped
for the coating:
10g desiccated coconut

MAKES 8 BARS

PER BAR:
156 Calories
11g Protein
10g Carbs
8g Fat

Place the oats, desiccated coconut, protein powder, cocoa powder and flaxseed in a large mixing bowl. Stir well. 

Add the nut butter and mash well with a fork.

Add the raisins and stir well. 

Add 4-5 tbsps cold water and mix well, to form a dough. Add more water if required. 

Refrigerate for 1 hour. 

Shape the dough into a rectangular block.

Top with the desiccated coconut. Spread evenly.

Cut into 8 bars.

Store in an airtight container and refrigerate for up to 4 days or freeze on same day.

Airfryer pizza wraps

Simply double the quantities to make multiple pizza wraps

to make one pizza wrap:
1 x 30g mini tortilla wrap
2½ tbsps tomato purée
15g cooked ham, chopped
3 plum tomatoes, sliced in half
15g mozzarella ball, torn into small pieces (use dairy free if preferred)
10g Cheddar cheese, grated (use dairy free if preferred)
¼ tsp dried oregano
⅛ tsp sea salt

Serves 1

Per serving:
223 calories
13g protein
18g carbs
11g fat

Place the tortilla wrap on a flat surface.

Spread the tomato purée over the centre of the wrap, leaving a small gap from the edge.

Add the remaining ingredients.

Optional: Lightly brush the edge of the wrap with water, to help it seal.

Fold each wrap in half.

Crimp the edges of the wrap with a fork.

Preheat your airfryer to 180˚C/350˚F or prepare a medium grill.

Cook for 5-7 minutes, or until a light golden colour and crispy.

Consume immediately

MARKS FAKE AWAY SAUSAGE & EGG MCMUFFIN

INGREDIENTS
250g (5% fat) pork mince
1/4 ring of good quality black pudding
Salt & pepper small bunch of fresh sage chopped
2 Easy single Cheese slices
2 brioche muffin buns
tablespoon of oil to fry
ketchup
Make this a sausage & egg Mcmuffin by frying an egg in a metal mould in a pan or 70 second in a plastic egg mould in the microwave

INSTRUCTIONS
Mix the pork mince and pudding, salt, pepper and sage together in a bowl.
Using your hands, form the mince into round pattis.
add your oil to-the pan and fry off the pattis over a medium heat, flipping occasionally.
Ensure they are cooked through, approx 10 mins turn the heat off put your cheese over the patties .
Serve in the brioche bun with tomato ketchup and your egg and enjoy

Starting in July I will be starting a FREE 16 week marathon and nutrition and support group.
I have helped so many people over the past 19 years in the fitness industry and I have got the go ahead to get back to training myself.
Mentally it has been a killer for me not been able to train and this year I want to complete my 100 marathon.
I want to give back to you while I do this and set up a FREE support to help each other and help me get through this as it’s been over two years since i have competed due to my illness and surgery.

Pad Thai

180g rice noodles
300g chicken breast, cut into thin strips
1 tbsp avocado or coconut oil
120g red bell pepper, finely sliced
2 garlic cloves, minced
2 large eggs
100g carrot, coarsely grated, sliced or cut into matchsticks 3 spring onions, finely chopped
3 tbsps coriander, finely chopped
30g salted peanuts, finely chopped

For the sauce:
2 tbsps fish sauce
21⁄2 tbsps rice vinegar
1 tbsp soy sauce or tamari
the juice of 1 lime

Bring a large saucepan of water to a boil. Add the brown rice noodles and cook according to package instructions. Drain and rinse under cold water, to prevent the noodles sticking together.
Pat the chicken dry using kitchen roll.
Heat the oil in a large frying pan over a medium flame. Add the chicken and stir fry for 4 minutes.
Add the bell-pepper and garlic. Stir fry for 3 minutes.
Push the chicken, garlic and bell-pepper to the side of the pan.
Crack the eggs into the pan. Stir well to scramble the eggs. Once the eggs are cooked, stir in the chicken.
Add the sauce ingredients, cooked noodles, carrot, spring onions, and coriander. Gently stir and cook for 1 minute.
Serve garnished with peanuts and lime wedges.
Consume immediately.

Serves 3
Per serving: 420 Calories 35g Protein 34g Carbs 16g Fat.
