Chocolate coconut protein bars
80g ground oats (use gluten free if preferred)
70g chocolate or vanilla flavour whey or plant-based protein powder
8g unsweetened cocoa powder
25g desiccated coconut
25g flaxseed
55g smooth nut butter of your choice
35g raisins, chopped
for the coating:
10g desiccated coconut
MAKES 8 BARS

Place the oats, desiccated coconut, protein powder, cocoa powder and flaxseed in a large mixing bowl. Stir well.
Add the nut butter and mash well with a fork.
Add the raisins and stir well.
Add 4-5 tbsps cold water and mix well, to form a dough. Add more water if required.
Refrigerate for 1 hour.
Shape the dough into a rectangular block.
Top with the desiccated coconut. Spread evenly.
Cut into 8 bars.
Store in an airtight container and refrigerate for up to 4 days or freeze on same day.
