The result of my cookery demonstration with University of Limerick students this morning. I had a really enjoyable class showing the students how to make nutritious food that won't break the bank. A little bit of preparation can go a long way. I'm sorted for the weekend now!

Finally, my first attempt at making golden ghee and what a result 😍

Ghee is made from unsalted butter and is rich in fat-soluble vitamins A and D (nutrients that are SUPER important for our immune system). In the process of making ghee, the milk solids in butter (proteins and natural sugars like lactose) are removed, leaving only this liquid gold. Ghee is more stable than butter when heated, meaning less free radicals are produced when the fat is heated. I added turmeric and black pepper to enhance its nutritional status, hence the incredible orange colour. Thanks for that excellent tip!

Dinner this evening is a lovely halloumi salad 😍. Grilled halloumi, organic salad, cucumber, radish, black olives, artichoke, raw sauerkraut (great for the digestion) and pomegranate, dressed with extra virgin olive oil and lemon juice. Yum!

Purple smoothie this morning. Lots of greens in there but the blueberries won out! Frozen blueberries, courgette, spinach, foraged cleavers, super greens powder, raw cacao, almond butter, sprouted flaxseeds, water and some oat milk.

I picked the cleavers on my walk yesterday. It is a great plant for the lymph system and therefore supports the immune system as well. Cleavers is everywhere at the moment!
