In the food world, itโ€™s the ultimate โ€œfrenemy.โ€ Itโ€™s a preservative (E220โ€“E228) that keeps your wine clear and your dried fruit from looking like a shrivelled sock. But for some people, itโ€™s a total party crasher.

โ€ข The Reaction: It releases a gas that irritates a personโ€™s airways, causing wheezing or โ€œtightness.โ€

There was more than a little local history made this week at An tSean Bheairic in Falcarragh. Thanks to Patrick Carr (DLDC) and the team at About Hygiene Ltd, a new group of food-safety champions has officially graduated from HACCP training.

๐๐จ ๐Œ๐จ๐ซ๐ž โ€œ๐ˆ๐ง๐ฌ๐ฉ๐ž๐œ๐ญ๐จ๐ซ ๐ƒ๐ซ๐ž๐š๐โ€

For those already working in the industry, the mission was simple: survive the course and come out confident. The good news is they did exactly that. They can now face a Health Inspector with confidence and a perfectly completed temperature log. Clipboards are no longer something to fear, and conversations about cross-contamination now come as naturally as a morning coffee.

For others in the group, the training opens the door to new opportunities. Several learners are preparing to enter the workforce and now hold what many hospitality employers see as a golden ticket: a recognised HACCP certificate. Heading into 2026, they are organised, informed, and ready to step into workplaces across Donegal.

It was a fantastic day of learning, plenty of laughs, and thankfully zero food-safety scares. The only real change is that everyone now looks at a raw chicken with a healthy level of suspicion.

Falcarragh is officially ready for the 2026 season: hands washed, certificates earned, and standards set.

My colleague Fiona McLoughlin and I recently attended the FSAI-hosted seminar Navigating Food Safety Misinformation at the National Convention Centre. It was a timely and thought-provoking event that highlighted just how easily misinformation can spread online.

Journalist Mark Little delivered an engaging talk on how to separate credible information from digital noise. His message was clear: take the time to look beyond what appears in your feed and always question the source.

Speakers from the FSAI and the Irish Cancer Society also addressed the growing influence of online personalities promoting so-called โ€œmiracle foodsโ€ and extreme diets. While these claims are often presented confidently, they frequently lack scientific evidence.

One of the most powerful moments came from Dr Claire Kilty, Head of Research at the Irish Cancer Society, who shared a heartbreaking example of how dangerous misinformation can be.

She spoke about a 23-year-old woman described as exceptionally bright who was diagnosed with Non-Hodgkin lymphoma. With chemotherapy, her survival rate was estimated at around 80%. However, influenced by her mother, a well-known conspiracy theorist, she rejected medical treatment and instead pursued the so-called Gerson Therapy, involving juicing and coffee enemas. Tragically, seven months later she passed away from a heart attack caused by a massive untreated tumour.

It was a stark reminder of how misinformation can isolate people from credible advice and lead them towards dangerous alternatives.

A simple but important rule to remember: always check the source, question the motive, and think carefully before accepting health advice shared online.

Evidence-based information saves lives.

Over the two days, participants completed their training and are now ready to manage HACCP in their workplaces, helping to maintain high food safety standards across their organisations.
