Since establishment The Urban Co-op continues to champion organic and local produce and support local suppliers. It is creating community wealth rather than shareholder wealth, by challenging traditional business models, ownership and control. Our Mission

Our March Favourite Product is Laundry Sheets⁠

Cormac ordered these for the shop, and I decided to try them out. I find them fabulous, especially as we have sensitive skin issues in the house. The pack is for 60 washes. I use 1/2 a sheet and get 120 washes from a pack. They worked wonders in cleaning makeup-stained towels from recent visitors. Don't just take my advice. Review by Geraldine⁠

Anne's March recommended reading is The Home Creamery by Kathy Farrell-Kingsley⁠

I really like this book! Having access to raw milk, I have started to experiment more with ideas at home when I get the time. Apart from the superb flavour, the cost saving is notable. Learning to make simple foods again, like yoghurt and cheeses, is kind of like a super power. While the book is American based and the measures are not metric, they should be straight forward enough. When the kitchen is ready, we will be demonstrating for you!⁠

Making your own yoghurt is our March recipe⁠

RECIPE⁠
1 litre of milk (raw or pasteurised)⁠
1 small tub of plain yoghurt (I use Mossfield)⁠
A thermometer⁠
A saucepan⁠

METHOD ⁠
This is my version of yoghurt. Safe to say that over the years, I have made quite a bit, but I have a renewed interest in it with Jersey milk, which is a different level altogether! If you haven’t made yoghurt before, do give it a go. The process and the outcome are a revelation!⁠

From Old T-Shirts to a Door Mat⁠

Zero waste does not always mean buying something new. Sometimes it is about seeing the potential in what already exists. This month we are delighted to share the story of one of our suppliers Natallia, who creates beautiful, practical door mats from old t shirts.⁠

The process is simple but thoughtful. The t shirts are washed, cut into long strips and then knitted by hand into textured mats. What might have ended up in landfill is transformed into something useful and long lasting.⁠

Inclusion in action at The Urban Co-op⁠

At The Urban Co-op, inclusion is not just a value we talk about. It is something we actively practise every day. Our community includes volunteers from disability support groups alongside secondary-level students completing work placements, and together they play an important role in the life of The Urban Co-op. ⁠

We believe that if you want to be truly inclusive, you have to make space for everyone in the community. That means recognising different abilities, learning styles, confidence levels and strengths, and creating an environment where people feel welcome, supported and valued.⁠

Red Lentil and Sweet Potato Soup is Jacques's Vegan recipe for February.⁠

I was planning on making a vegetable soup, one made from onion, carrot and potato.⁠

Discussing this with my mother, I mentioned something about adding a few red lentils to bulk it up. She replied, “and they are full of protein and why not some sweet potato, they go well together ”.⁠

When talking to my mother, we often discuss food preparations, as we have since I was a little boy, that is how I learnt to cook. Today, she is 92, a staunch vegan and still an avid cook. When she recommends something, I listen.⁠

So, my soup changed to a ‘Lentil and Sweet Potato Soup’.⁠

Enough here to feed 4 people at a sitting.⁠

Our Story

The Urban Co-op is Limerick’s first co-operative grocery store to be owned, controlled and operated by the community. Our aim is to sell wholesome food at affordable prices, providing maximum transparency in the process. We support local farmers, growers, producers and start-ups. We are proud of our relationship with our suppliers, and the quality of their produce. We prioritise sourcing food from organic, sustainable, ethical farming practices and we support local, artisan producers.

We follow the seven co-operative principles, with community and education being of special importance. Our community, our membership, comprises the consumers who shop in the store, the staff and volunteers who work there, and the farmers, bakers, producers and suppliers who feed us. Membership is open to all. We are growing all the time, and we encourage you to join us in building a great community project for a sustainable Limerick, and of course - a great place to shop!
