This summer chicken stew dinner makes a fabulous group meal as apart from the carrots it all cooks in one pot and is easy to serve in a big sharing dish to let people help themselves. It’s grain free and only contains carbohydrates because of the white wine in the sauce.🍗🧄🧅🥕🧂

Full of flavour, the summer chicken stew is always a crowd-pleaser.

Ingredients:

🍗4 chicken breasts on the bone
🍗1 tsp salt
🍗1 tsp freshly ground black pepper
🍗2 tbsp olive oil
🍗2 red pepper, sliced
🍗2 carrots, sliced into chunks
🍗2 cloves garlic, chopped
🍗450g tin chopped tomatoes
🍗75 ml white wine
🍗1 tbsp fresh thyme leaves
🍗1 tsp fresh oregano leaves
🍗100ml chicken stock
🍗1 tbsp capers
🍗10g chopped fresh flat-leaf parsley leaves

Directions 👇

1. Season the chicken with 1/2 tsp salt and 1/2 tsp pepper. In a heavy, large frying pan, heat the olive oil over medium heat, you could also use Fry Light Spray instead of the oil but it will affect the flavour slightly. When the oil is hot, cook the chicken until browned on both sides. Remove from the pan and set aside.
2. Parboil the carrots for about 10 minutes and then add to the pan.
3. Keeping the same pan you cooked the chicken in over medium heat, add the peppers and cook until they have browned and softened slightly, about five minutes. Add the garlic and cook for one minute. Add in the tin of tomatoes, white wine, and herbs. Using a wooden spoon, scrape the browned bits off the bottom of the pan. Return the chicken to the pan, add the stock, and bring the mixture to a boil. Reduce the heat and simmer, covered, until the chicken is cooked through, about 20 to 30 minutes.
4. When you are ready to serve, add in the parsley and capers 2 minutes before. This dish can be made in advance and stored in the fridge to reheat, just keep the flat-leaf parsley and capers out until then.

☕Increasing energy and focus: Coffee can provide a temporary energy boost and improve mental focus, which may enhance your ability to engage in physical activity and stay active throughout the day. This, in turn, can contribute to burning more calories and aiding weight loss.

☕Appetite suppression: Caffeine may act as a mild appetite suppressant, reducing feelings of hunger and helping you consume fewer calories. However, this effect is temporary, and the impact on overall calorie intake may vary.

☕It's important to note that the benefits of coffee for weight loss are primarily associated with black coffee or coffee consumed without added sugar, cream, or high-calorie flavorings. Adding excessive amounts of sugar, cream, syrups, or other calorie-dense additives to your coffee can significantly increase its calorie content, which may hinder weight loss efforts.

Are you struggling with weight gain during Menopause? Here at Motivation, we’re here to help! But first things, first what causes weight gain during menopause?

Menopause is not easy to handle. It comes with mood swings, night sweats, generalised anxiety, and hot flashes along with the frustrating
weight gain issue (or very slow weight loss, for someone attempting to lose weight). In fact, experts have suggested that a woman could typically expect to gain 12 to 15 pounds (5.4kg-6.8kg). Let's learn more:

👉Hormonal changes: During menopause, there is a decline in the production of estrogen and progesterone. These hormonal changes can lead to an increase in overall body fat, especially around the abdomen. The decrease in estrogen levels may also contribute to a decrease in muscle mass, which can impact metabolism and lead to weight gain.
👉Slowed metabolism: As women age, their metabolism naturally slows down. This decrease in metabolic rate can result in a reduced calorie burn, making it easier to gain weight or harder to lose weight.
👉Redistribution of fat: Menopause tends to cause a shift in the distribution of body fat, with more weight being gained around the abdomen rather than the hips and thighs. This change in fat distribution is associated with an increased risk of cardiovascular disease and other health issues.
👉Changes in appetite & cravings: Some women may experience changes in appetite and food cravings during menopause. This can lead to an increase in calorie intake, particularly for foods that are higher in fat and sugar, which can contribute to weight gain.

👉Reduced physical activity: Menopause often coincides with other life changes, such as increased work or family responsibilities. This can lead to a decrease in physical activity levels, which can contribute to weight gain or hinder weight loss efforts.
