🥣✨ Anti-Inflammatory Red Lentil Soup
This cozy bowl has everything I love — Fiber, plant-based Protein, and tons of Anti-Inflammatory goodness from turmeric, garlic, and ginger. It’s quick, nourishing, and perfect for meal prep (because busy Dietitian-Mom life needs easy wins 🙌)
Here’s how to make it:
Ingredients:
3 carrots, chopped
3 celery stalks, chopped
1 large onion, chopped
3–4 garlic cloves, minced
1 k**b of ginger, grated
2 tbsp tomato paste
1 tsp garlic powder
1 tbsp cumin
1 tbsp oregano
2 tbsp turmeric
Pink salt + pepper to taste
1 cup dry red lentils, rinsed
4 cups chicken or vegetable stock
2 cups water
2 cups spinach, chopped
½ cup fresh parsley, chopped
Lemon juice to taste 🍋
Directions:
1️⃣ In a large pot, sauté onion, carrots, celery until onions start to soften. Then add garlic and ginger until fragrant and softened (about 1-2 minutes).
2️⃣ Stir in tomato paste, garlic powder, cumin, oregano, and turmeric. Cook for another minute to bring out the flavors.
3️⃣ Add red lentils, stock, and water. Bring to a boil, then reduce heat and simmer for 20–25 minutes until lentils are soft and soup thickens.
4️⃣ Stir in chopped spinach and parsley. Simmer for another 2–3 minutes until wilted.
5️⃣ Finish with a squeeze of lemon juice, adjust seasoning, and enjoy warm.
This freezes well and makes the perfect gut-friendly, anti-inflammatory lunch and dinner!
