Give your festive thali a healthy twist with this Quinoa Vegetable Pulao — light, aromatic, and packed with protein, fiber, and wholesome goodness. It’s the perfect alternative to traditional rice dishes during the festive season.

Ingredients:

Quinoa – 1 cup (washed and soaked for 15 minutes)

Mixed vegetables (carrot, beans, peas, capsicum) – 1 cup chopped

Onion – 1 medium, sliced

Tomato – 1 small, chopped

Ginger-garlic paste – 1 teaspoon

Green chili – 1 finely chopped (optional)

Cumin seeds – ½ teaspoon

Turmeric powder – ¼ teaspoon

Garam masala – ½ teaspoon

Salt – as per taste

Olive oil / ghee – 1 tablespoon

Water – 2 cups

Fresh coriander – for garnish

Method / Steps to Make:

Heat oil or ghee in a pan and add cumin seeds.

Once they crackle, add onions and sauté until golden brown.

Add ginger-garlic paste and sauté for a minute.

Mix in chopped tomatoes, turmeric, and garam masala; cook till tomatoes soften.

Add all the vegetables and stir-fry for 2–3 minutes.

Add soaked quinoa, salt, and water. Mix well.

Cover and cook on a low flame for 15–20 minutes or until quinoa is fluffy and water is absorbed.

Fluff gently with a fork and garnish with fresh coriander leaves.
