🎒 vegan pad thai

You can’t go wrong with a bowl of noodles and veggies, can you? Add a punchy sauce and some crunchy peanuts and lunchtime’s needn’t be so boring! This is our take on the classic Pad Thai 🍜

Ingredients
(serves 2)
2 tbsp of sesame oil
1 red chilli, finely diced
1 shallot, finely diced
2 nests of rice noodles
125g bean sprouts
1 courgette, spiralised or thinly sliced
1 carrot, spiralised or sliced
130g edamame beans
3 tbsp of soy sauce
2 tsp of tamarind paste
1 tbsp of maple syrup
2 tbsp of rice vinegar
2 tbsp of crushed peanuts
1/2 lime, cut into wedges
3 spring onions, sliced
Fresh coriander

Method
1️⃣ Begin by boiling a pan of water on a medium heat. Once boiled turn the heat off and place the nests of noodles into the pan. Leave for 5 minutes before draining and rinsing with cold water.
2️⃣ Meanwhile heat another pan on a medium heat and add 1 tablespoon of sesame oil along with the diced shallots.
3️⃣ Cook for a few minutes before adding the diced chilli, bean sprouts, and spiralised courgette and carrots.
4️⃣ Next in a bowl combine the remaining tablespoon of sesame oil with the soy sauce, tamarind paste, maple syrup and rice vinegar.
5️⃣ Pour this into the pan with the veggies along with the edamame beans and cooked noodles.
6️⃣ Combine well and leave to cook for a few minutes longer before splitting between lunch boxes.
7️⃣ Garnish with crushed peanuts, spring onions and coriander. Squeeze over some lime juice and enjoy!

🎒 halloumi + chickpea wraps 🌯 with tzatziki

A simple summer wrap that packs up perfectly for picnics in the park [or at the kitchen table if it’s not quite picnic weather…☁️]

Ingredients
(serves 3)
3 wholemeal/seeded wraps
1 tin of chickpeas, drained and rinsed
1 tbsp of extra virgin olive oil
1/2 tsp of ground cumin
1/2 tsp of paprika
200g halloumi cheese, sliced
Shredded lettuce
1/2 cucumber, 1/2 sliced and 1/2 grated
2 tomatoes, chopped
2 tbsp of greek yoghurt [dairy or dairy-free]
Handful of mint leaves, finely chopped
Crudités and hummus, to serve

Method
1️⃣ Preheat the oven to 180ºc and scatter the chickpeas onto a baking tray. Sprinkle over the paprika and cumin and drizzle over the olive oil. Place into the oven to roast for 20 minutes.
2️⃣ Meanwhile prepare the tzatziki. Squeeze out any liquid from the grated cucumber and placing it into a bowl with the Greek yoghurt and chopped mint leaves. Mix to combine.
3️⃣ Heat a large pan on a medium heat and fry the halloumi slices for a couple of minutes on each side until golden.
4️⃣ Assemble the wraps with lettuce, chopped tomatoes, sliced cucumber, roasted chickpeas, cooked halloumi, and finish by adding a few dollops of the tzatziki.
5️⃣ Pack into lunchboxes along with hummus and crudités, if you like. Enjoy!

Here's a disclaimer! You'd be saving over 200 bucks every month to get that pair of Jordans👟👟. Spending over a 100 bucks to get your hair and nails done💅💁‍♀️. Always making sure to get yourself the last tech update🤳💻📱. Spending money here and there while when you break it down, it only takes 5 dollars for you to have that healthy meal🍜🥗. And 20bucks a month to get your ass to the gym🏋️‍♂️🏋️‍♀️. Or even better, $0 to do your homeworkouts🤸‍♀️🤸‍♂️🧘‍♂️🧘‍♀️!!! Explain again what's expensive?!🤔
At the end of the day, it's always about investing in your own health🤗! If you feel good about buying a $300 pair of shoes👟 or a 1k Mobile phone📱, i don't see why you won't feel good spending much less on your health. INVEST on your health🤗, cause once we get older🧓👴, only those who invested on their health will ultimately enjoy the harvest💪. Think about it 🙌🙌🤗

A simple summer wrap that packs up perfectly for picnics in the park [or at the kitchen table if it’s not quite picnic weather…☁️]

Ingredients

🎒falafel grazing lunchbox

Falafel lovers, we see you and raise you this tasty tasty lunchbox of spiced, baked falafel 🧆 a crunchy, fresh slaw 🥕 creamy creamy hummus 🥣 and the all important pita for dipping!

Ingredients
(serves 3)
FOR THE FALAFEL
1 red onion, cut into chunks
1 can of chickpeas, drained and rinsed
55g gram flour (can sub for plain flour)
25g tahini
1 tablespoon of fresh parsley, chopped
Juice from 1/2 lemon
3 garlic cloves, crushed
1 1/2 teaspoons of ground cumin
1/4 teaspoon of chilli powder
1/2 teaspoon of salt
2 tablespoons of olive oil

FOR THE SLAW
1/2 apple, finely sliced
1/8 red cabbage, finely sliced
1/8 white cabbage, finely sliced
1 carrot, finely sliced
1 tbsp mayonnaise [vegan if required]

FOR THE REST
3 pita breads
Bag of salad leaves
Hummus

Method
1️⃣ Begin by placing the red onion into a food processor and blending until diced. Then add the rest of the ingredients for the falafel [apart from the oil] and blend again until combined and large crumbs form.
2️⃣ Empty the mixture into a bowl and place into the fridge to chill for a minimum of 1 hour.
3️⃣ Meanwhile prepare the slaw by combining all of the ingredients together.
4️⃣ When ready to cook the falafel heat a pan on a medium heat and add the vegetable oil.
5️⃣ Once the oil is hot use a tablespoon to split the falafel mixture into 9 and mould into shape of choice. We went for little obling shapes but you could make them into balls, or even little patties. Place them gently into the pan.
6️⃣ Cook for a couple of minutes on each side until golden brown before placing on a piece of kitchen roll to remove any excess oil.
7️⃣ Line the lunchboxes with salad leaves, then add the slaw, falafel, pitta breads and

🎒 one-pot butterbean pasta

For those days when you want a tasty, comforting dinner but just can’t face a sink of washing up when you’re finished – this is for you!

For those days when you need to make lunch for the week but can’t face a sink of washing up when you’re finished – this is for you!

One-pot. One tasty bowl of pasta 🍝

Ingredients
(serves 2-3)
2 tbsp extra virgin olive oil
1 red onion, thinly sliced
3 garlic cloves, crushed
1 red pepper, sliced
200g cherry tomatoes, halved
1 tin butterbeans, drained and rinsed
1 tin chopped tomatoes
1 tsp dried oregano
1/2 tsp paprika
275g wholewheat penne pasta
460ml vegetable stock
1/2 tsp salt
3 handfuls kale
Handful grated cheese [dairy or dairy-free]

Method
1️⃣ Begin by heating a large pan on a medium heat with 1 tbsp of the oil. Add the red onion, garlic, and cherry tomatoes.
2️⃣ Meanwhile, massage the kale with the remaining tbsp of oil in a bowl and put to one side.
3️⃣ Add the sliced pepper, oregano, and paprika to the pan and combine. After a few minutes add the butterbeans, chopped tomatoes, penne pasta and vegetable stock. Season with salt and leave to simmer, stirring frequently for 15 minutes.
4️⃣ Once the pasta has absorbed most of the stock and is cooked, add the kale and allow to cook for 5 more minutes until wilted.
5️⃣ Split the pasta between the lunchboxes and finish with grated cheese. Enjoy! #2021

🎒 halloumi hummus bowl

Two food things we love?
Halloumi ✔️
Hummus ✔️
If you’re on the same page this lunch is pretty much a dream! We serve it here with a little couscous salad with tomatoes and cucumber and some toasted pumpkin seeds for that much needed crunch. A lovely little salad to take to the park for a picnic, too.

Ingredients
(serves 3)
280g halloumi, sliced
3 tbsp hummus
180g couscous
450ml boiling water
1 vegetable stock cube
200g cherry tomatoes, halved
1/2 cucumber, sliced and halved
1 bag rocket leaves
1 tbsp pumpkin seeds, toasted
Pinch paprika, to serve

Method
1️⃣ Begin by combining the boiling water with vegetable stock cube. Add the couscous and leave to one side whilst you cooke the halloumi.
2️⃣ Heat a non-stick griddle or standard pan on a medium heat and once hot add the sliced halloumi. Cook for a few minutes on each side until the slices turn a lovely golden colour.
3️⃣ Give the couscous a stir/fluff with a fork. It should have by now fluffed up and absorbed the stock – if it hasn’t just leave to the side for a few more minutes. Then add the cherry tomatoes, rocket leaves, and cucumber and combine.
4️⃣ Split between 3 lunchboxes, top with the cooked halloumi slices and add a tablespoon of hummus to each.
5️⃣ Add a small pinch of paprika to each and top with the pumpkin seeds. Enjoy!
