Fish Curry Meen Pattichathu




Ingredients
Serves: 5

600 gms Seer Fish curry pieces
2 tablespoon Fish masala powder
1/4 teaspoon Turmeric Powder
3 Slit Green Chillies
1/2 teaspoon Ginger Garlic Paste
3 Shallots

2 sprig Curry Leaves
1 tablespoon Cocunut oil
2 Gambooge
as required water
Mustard
for taste Salt

Directions

Prep:15min › Cook:15min › Ready in:30min

Soak gambooge in water.
Heat oil in a kadai and splutter mustard seeds.
Add shallots, ginger garlic paste and green chillies. fry untill it becomes light brown.
when the shallots turns light brown add turmeric powder and fish masala powder(i used eastern fish malasa). keep it for a while.
Add 1 cup water and salt.
When the gravy starts boiling, add the fish pieces and gambooge.
Cover the kadai and cook on gentle heat for around 10 minutes.

Tip

While washing the fish, add some turmeric powder.

Ingredients--

1. 1 quart vanilla ice cream

2. 1 quart prepared lemonade

3. 1 (750 milliliter) bottle champagne



Directions

Place the softened ice cream into a punch bowl. Pour in lemonade and champagne. Stir briefly then serve.

Too much Chocolate Cake
Ingredients



1. 1 (18.25 ounce) package devil's food cake mix

2. 1 (5.9 ounce) package instant chocolate pudding mix

3. 1 cup sour cream

4. 1 cup vegetable oil

5. 4 eggs

6. 1/2 cup warm water

7. 2 cups semisweet chocolate chips

Directions

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water. Stir in the chocolate chips and pour batter into a well greased 12 cup bundt pan.
Bake for 50 to 55 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean. Cool cake thoroughly in pan at least an hour and a half before inverting onto a plate If desired, dust the cake with powdered sugar.

Makes: 4 servings

Ingredients

seeds from 3 pomegranates

a large piece of ginger, grated

water

Method

Blend all the ingredients using a juicer or a blender along with the ginger until smooth. Make sure the seeds grind along with it as well. The seeds have a lot of curative properties.

Strain any excess residue and serve the pomegranate juice immediately.

Vegetable Clear Soup is made from farm fresh vegetables that are simmered in a vegetable stock and flavored with black pepper and garlic. This is just a perfect soup for those chilly evenings.

Ingredients

4 teaspoon olive oil/ butter

1 onion, cubed

1 capsicum, deseeded and cubed

2 carrots, peeled and sliced thin

1/4 cup, peas, steamed

1/4 cup corn, steamed

100 grams paneer/tofu, sliced into thin squares

2 liters hot water

Ingredients for Seasoning

1- 1/2 teaspoon salt

1 teaspoon black pepper powder

3 cloves garlic finely chopped and then crushed

3/4 teaspoon celery powder (or a fresh celery stalk, finely chopped)

1 teaspoon sugar

2 teaspoons vinegar

8-10 sticks of parsley or coriander

Method

Heat oil in a heavy bottomed sauce pan; add the onions and sauté on a medium to low flame till translucent. Next add the capsicum and sauté till they begin to soften and get tender.

Add the remaining the vegetables, paneer/tofu, garlic, celery powder and the remaining seasoning ingredients along with the hot water. Allow the soup to come to a boil and simmer for about 10 minutes to infuse all the flavors into the broth. Serve with toasted bread

Notes: Other vegetables that you could add include cauliflower, broccoli, baby corn, and cabbage. Spinach leaves could be substituted for parsley or coriander.

Palak lachha paratha is an easy, healthy spinach paratha recipe for kids. Preparing a tasty, kid friendly, healthy palak recipe that Nehal will eat is a difficult task. I somehow get around to make him eat his share of spinach in some form or the other. Be it a spinach sandwich, spinach soup, spinach rice or palak paratha.






Palak Lachha Paratha Recipe

Prep & Cooking Time: 30 mts

Serves 3-4 persons

Cuisine: North Indian

Ingredients:

2 cups atta/whole wheat flour/godhuma pindi

pinch of salt (optional)

1 cup spinach puree (wash, blanch and puree 2 bunches of spinach)

1/2 – 3/4 tsp red chili powder

1/2 tsp coriander powder

3/4 tsp carrom seeds/ajwain/waamu

salt to taste

1 Prepare a soft pliable dough of the atta/whole wheat flour, palak puree, carrom seeds, red chili powder, coriander powder and salt. Add little water if necessary while preparing the dough. Allow to sit for 3-4 hrs (minimum an hour).
2 Pinch off large lemon sized balls from the dough. Dust some flour on the working surface and roll each ball to about 5-6″ in diameter. Drizzle a few drops of ghee or oil and spread it around the paratha. Dust a little flour all over.
3 Use a knife and cut 3 inches from the center of the paratha to one end of the rolled out paratha. Take the cut end of the paratha and roll it towards the other end of the paratha (towards the cut side). See picture above.
4 Flatten it lightly with your palm. Dust the working surface and roll out a thick paratha. Prepare with the rest of the dough.
5 Heat a tawa and place on high flame. Place paratha on the hot tawa. Cook on both sides till brown spots appear and the paratha is cooked. Drizzle ghee on both sides and serve hot with dal tadka, yogurt, salad and pickle of your choice. Makes for a complete meal.

Vegetable Pakora with a cup of masala chai is comforting food on a pleasant winter evening. A vegan recipe that makes for a great party finger food. The standard Vegetable Pakora recipe calls for the use of mixed vegetables, chick pea flour and carom seeds. But I tend to tweak the recipe and add a few more spices to pep up the flavor.

In today’s Vegetable Pakora recipe, I used carrots, beans, cabbage and potatoes but you can also add raw plantain, eggplant, caulilfower and pumpkin. Make sure to use fresh firm vegetables. Chickpea flour and carom seeds are essential ingredients that make the pakoras visually appealing and appetizing. But do add an extra ingredient, dry fenugreek leaves aka kasoori methi to your pakora batter which will elevate the flavor of the pakoras by leaps and bounds. It adds depth of flavor and keeps you coming back for more
