.Sooji ka Meetha Tikki!

You Need:
Sooji: 1/2 cup,
Castor sugar: 200 gm,
Desiccated coconut: 1 cup,
Half-crushed Cashew: 1 tbsp,
Milk: 1 cup,
All purpose flour: 1 cup,
Atta/Wholewheat Flour: 3/4 cup,
Ghee: 2 tbsp (for maiyan),
Mewa/Khoya: 1/2 cup,
Oil: for deep Frying
How to:
Mix maida and atta together and then add the ghee and crumble the mixture very well.
Now all other dry ingredients together, mix well. Save some crushed cashew for garnishing.
Now made a hard dough using the milk.
Heat oil for deep frying. Make small balls from the dough and give them tikki shape or any other shape of your choice.
Fry the tikkis till golden brown. Serve them with a wide smile!

Enjoy the winter with Pea's Kachori and Chana Daal (Bengali Style)!

Recipe for both the Kachori and the Dal:

For Kachori:

400 gm Maida
1 Tbsp Ghee (for moiyan/crumbling the maida)
salt
For stuffing:
100 gm green peas,
25 gm roasted chana,
1 tsp Ajwain
1/2 tsp Sugar,
1/2 tsp Kalonji,
Pinch of Hing,
1/2 tsp dry ginger,
salt to taste

Put ghee to the flour and crumble it. Add salt and make a semi soft dough using water. Now mix all the ingredients together for stuffing. Take desired amount of dough, make round, roll a bit and put the stuffing inside and close. Roll again to medium round. Deep fry. Kachori is ready.

For the Chana Dal:

Boil about 300 gm Chana dal with haldi, salt, red chili powder and 1 inch grated ginger.
For tadka:
2 bay leaves, 2 broken dried red chilies,
1/2 tsp Kalonji
1/4 tsp methi dana,
1 tsp fennel seeds,
a pinch of hing,
1/2 tsp Sugar,
1 tbsp Imli ka juice/lemon juice

Just fry the ingredients for Tadka and put the tadka to the dal. Khatta Meetha Chana dal is ready! Enjoy with the Hot Kachoris!

On a chilly morning of mid January, no one can resist having a plateful of steaming Momos and red hot chili chutney, I bet!

Steamed Chicken MOMO Recipe:

You need:

All purpose flour: 1 cup
Salt: ½ tsp
Oil: 1 tsp
Water: to make dough
Chicken: 200 gm, minced
Spring Onion: 1 medium sized bowlful shredded
Ginger: 1 inch, crushed
Green Chilli: 2-3, shredded
Soya Sauce: 1 tbsp

How To:
Put soya sauce, crushed ginger, shredded spring onion and green chillies to the minced chicken and mix them well. Keep aside for a while.
Make semi soft dough with the flour, salt, oil and water.
Make small (1 ½ inch) balls from the dough and roll each one as thin as possible.
Now make small folds on the edges of the rounds. After folding half of the round, put one spoonful of chicken mixture and close the other part on the folding. Press well and keep aside.
Boil water in the steamer. Grease the steaming plates and the momos and put the momos on the plate. Steam covered for about 10 minutes. Serve hot with red chili chutney!

Alternatively give the rounds potli shape, put the chicken stuffing inside and press the mouth and tie a knot with the green leafy string of the spring onion and steam them for 10 minutes. Your chicken MOMOs are ready!

Wish I could become a little more active on this page!!

Here is the detailed yet easy recipe of the White Bread...yeah, homemade! Sound wonderful, right? Below is the how-to-do for you, guys!

Homemade Plain White Bread Loaf Recipe:

You need:

All purpose Flour (Maida): 3 cups
Salt: 1 ½ tsp
Dry Instant Yeast: 2 tsp
Sugar: 2 tsp
Oil: 1 tbsp
Water (lukewarm): 1 1/6 cups
How To:
Sieve the flour and the salt together, mix well.
Make a well in the middle of the flour and put the sugar and the dry instant yeast, mix. Add a little lukewarm water to the sugar and yeast, wait for just 7-10 seconds.
Now start kneading the flour with everything together except for the oil. Add water little by little and keep kneading for about 12-15 minutes. Just add oil on your palms to get rid of the stickiness of the dough (don’t be afraid, the final product would compensate for the mess created in this phase!).
Kneading for about 14-15 minutes would leave a glossy shine on the dough and you have to make a smooth round mass of this dough after kneading. Place the dough in a large greased bowl and cover with kitchen towel or cling film or anything as to avoid the moisture from evaporating from the dough.
Keep the dough inside a lighted microwave oven or at a warm place for 90 minutes to let the dough rise double in size.
After 90 minutes, punch the dough lightly to let the air get out and to get the dough back in previous shape. Knead it for another five to seven minutes. Make a smooth round ball out of the dough and place it on the previous greased bowl. Keep the bowl again inside a warm place and wait for another 45 minutes or so for the second time.
After 45 minutes o so, the dough must have become again double in size (Sometimes, a little more!). Now get the dough on the oil-greased baking tray and get it the shape you desire. (This recipe would provide for two medium or one large sized loaf).
Preheat the oven at 190 degree Celsius. Brush the top of the dough with oil. Bake the dough for 40 minutes or until the upper crust of the loaf get golden brown.
Your purely homemade white bread loaf is ready to be gorged on! Heaven!

Recipe: FLOATING EGG-WHITE ON TOMATO SOUP
Serving:4-5

Ingredients:
Tomato: 5-6, cubed
Onion: 1 big, cubed
Ginger-Garlic Paste: 1 tsp
Salt: To taste
Black Pepper Powder: To taste
Water: 5 cups
Corn Flower: 2 tbs
Egg white: 2-3
Butte: 2 tsp

How To:
Heat butter in a deep pan and put the ginger-garlic paste an fry for a minute;
Add the cubed onion and saute till they turn slightly golden;
Add on the tomato cubes with pulp and cook for another 4-5 minutes or till they become mushy;
Add salt and pepper to taste.
Switch off the gas and let the mixture cool down completely.
Now, blend the mixture using 1 cup of water/veg stalk and put the whole thing in the same pan.
Add the rest 4 cups of water and salt and pepper (remember, we added them earlier also);
Dissolve the corn flower in half cup of water and mix it to the soup.
Let the soup come to a boil.
Whisk the egg-whites very well and keep pouring in the soup stirring continuously. Let the egg-whites coagulate and take their shape.

Serve piping hot with bread croutons!
