Sometimes all you need is a quiet night in with your favourite person and comfort food made with love. This is my GUT-FRIENDLY MUSHROOM BROTH WITH TOFU AND WANTONS.
Recipe:
Put a pot of water to boil. Add a good helping of chopped ginger, garlic, lots of dice mushrooms (shiitake and button). Let this simmer for 20-25 minutes. Now add carrots, celery stalks, onion, coriander shoots. You can also add miso, I didn’t because I ran out of it. If you can; add some shiitake mushroom powder as well.
Boil this for another 30-40 minutes. Once it develops a good depth of flavours, strain using a muslin cloth.
In a pan, sauté a little onion, garlic, mushroom slices and cook them well. Add in the broth, salt, som soya sauce, a dash of rice wine vinegar, lemongrass, coriander shoots and ginger. You can also add more vegetables here - I like carrots, enoki mushroom, pork choy, brocccoli. Boil tofu cubes in salted water for 10 minutes and then add them in. Add some rice noodles and a few frozen wantons.
To serve,
Take everything in a bowl, add a handful of bean sprouts, squeeze some lime, add some coriander. And you’re done.
This broth is designed for healing the gut lining. It supports a tired immune system, warms the body on a cold winter evening and gives you all the nourishment you need. It’s high protein but in the most gut friendly way possible.
