Veg.Handvo :
Mixed dal handvo
Ingredients:
1 cup rice, ½ cup chana dal, 2 tbsp. Urad dal, 2tbsp.moog dal, ½ cup curd/yogurt, 3 tbsp. grated bottle gourd, 3 tbsp. fresh green peas, 3 tbsp. finely chopped coriander leaves, 1½ tbsp. ginger paste, 3 green chillies, ½tsp. Jaggery powder/sugar, ¼tsp. turmaric, 4 tbsp oil, ¾ tsp. salt ,
2 tbsp. broken cashew,.
Tempering:
3 tbsp oil, ¾ tsp. mustard , 2 tbsp. white Sesame/til, few curry leaves. pinch hing.
Steps:
1. Soak rice, chana dal, urad dal, moog dal at least 3-4 hrs
2. Add ½ cup curd, ginger, garlic, salt and blend to slightly coarse paste .
3. Add grated lauki, green peas🫛, broken cashews, (you can also add finely chopped carrots🥕, finely chopped cabbage, also*all will realise water , so adjust batter consistency)
4. Mix well. (batter is slightly thick like idli batter consistency)
5. Now add eno and mix.
Pan cooking
1. Heat pan, with 3 tbsp. oil,
2. Once oil is hot add mustard, sesame, few curry leaves and pinch of hing
3. Splutter the tempering and spread uniformly over pan.
4. Pour handvo batter spread all over pan.
5. Cover and simmer for 5 min/till top is layer are dried .Cook on very low flame
6. Flip over gently . Cover and simmer for 5 min
7. Check ✅ both the sides are crispy
