Parmesan Zucchini Crisps

1 medium fresh zucchini
1/4 cup egg be**ers (can substitute egg whites)
1/4 cup grated parmesan

Pre-heat oven to 425.
Slice zucchini in round slices. Make slices thicker for more al dente and thinner for a softer, more cooked texture.
Pour parmesan cheese into a zip lock baggie or freezer bag. Dip zucchini slices into egg be**er and place in cheese bag. Close bag, shake until all pieces are coated and place on a non-stick baking sheet. Feel free to shake remaing bag mixture over zucchini.
Bake for 15 minutes or until cheese starts to melt and brown.
Tastes great with a marinara or ranch dipping sauce!

Mixed Fruit Shake Recipe
Apples, rich in malic acid, bananas are filled with healthy calcium and Vitamin B, pineapple and strawberries contain huge deposits of Vitamin C. What’s more, raspberries contain a lot of antioxidants which is great for your skin and your hair, and helps in faster metabolic speed.
Ingredients:
• 1 apple
• 1 handful grapes
• 1 handful chopped pineapple
• 1 handful strawberries or raspberries
• 1 banana
• 3 Mejdool dates
• ½ cup almond milk
• 1 cup crushed ice
• Honey to sweeten – optional (might not be needed if the concoction is sweet enough)
Procedure:
Peel and core the apple, and then chop it into small pieces. Put the apple in a blender. Add banana, grapes. strawberries/raspberries, almond milk, mejdool date, pineapple and blend on full speed for at least 1 minute or until everything is smoothly mixed. Taste, and if required, add a bit of honey to sweeten. Pour in the crushed ice and blend over high speed for 30 seconds more before serving.
