This healthy pasta recipe comes together quickly and with minimal ingredients.

How to Make the Perfect One-Pot Pasta

One-pot pastas are one of my weeknight favorites because there’s no extra dishes to wash and everything cooks together, infusing every bite of the meal with flavor. The key to ease with a dish like this is the dried pasta is cooked directly with the rest of the ingredients, absorbing the cooking liquid for even more flavor.

Ingredients

1 tablespoon canola oil
1 pound lean ground turkey
2 teaspoons kosher salt , divided
3 teaspoon ground cumin , divided
1 teaspoon oregano
1 1/2 teaspoon freshly ground black pepper , divided
¼ teaspoon crushed red pepper flakes
1 medium onion , diced
½ cup red bell pepper , diced
3 cloves garlic , minced or pressed
1 10- ounce can diced tomatoes and green chilies
1 teaspoon chili powder
10 ounces dried penne pasta
3 cups chicken broth
¼ cup heavy cream
4 cups fresh baby spinach (2 big handfuls)
½ cup shredded Monterey Jack cheese
Chopped cilantro , for garnish

Instructions

Heat the oil in a large, high-sided skillet or Dutch oven over medium high heat until it shimmers and then add the ground turkey with 1 teaspoon kosher salt, 1 teaspoon 1 teaspoon ground cumin, the oregano, 1/2 teaspoon black pepper and the crushed red pepper. Break up the turkey with the spices and cook for about 5 minutes.
Add the onion, red bell pepper, and pressed garlic and cook for another 5 minutes or until the turkey is browned and the veggies soften.
Add the canned tomatoes with green chiles to the skillet or pot with the rest of the kosher salt, cumin, black pepper, chili powder and stir.
Add the penne pasta and cover with the chicken broth, bring to a boil, turn down to a simmer, cover and cook until the pasta is just tender, about 8 minutes, stirring occasionally.
Stir in the cream and fold in the spinach and cook until the spinach wilts, taste for seasoning and top with the shredded cheese.
Garnish with the chopped cilantro, sit back and watch the forks fly!

Banana flour is exactly what it sounds like: bananas milled into powder form.

You can use it in any situation where you’d use flour: baking treats, making baby food, and thickening soups, sauces, and smoothies.

Did you notice I said green bananas? That’s because typical yellow bananas don’t work well in flour form. They’re sweeter and stickier than green bananas, so it’s difficult to mill them into a workable powder without adding chemicals like maltodextrin (a white powder made from corn, wheat, or other starches)

We love this vegetarian one-pot penne pasta on weeknights. Veggies, herbs, and lemon make the penne burst with flavor. Ready in 20 minutes!

Penne Pasta Recipe Ingredients

I felt like Martha’s recipe lacked a bit of flavor, so for my version I’ve amped up the herbs & seasonings. Here’s what makes my penne pasta recipe a delicious, easy meal for busy weeknights:

Leeks & garlic add a mild, sweet onion flavor.
Cherry tomatoes, zucchini & red bell pepper fill it with color, and they make this penne pasta taste like summer.
Basil & oregano give it a fresh Italian flavor.
Lemon juice & zest brighten it up.
Red pepper flakes add a little heat.
And toasted pine nuts bring a necessary crunch.
In lieu of freshly grated Parmesan cheese, I made a “cheese-like” h**pseed topping. This penne pasta is nicely flavorful on its own, so feel free to use the cheese or “cheese”, or skip both!

How to Make One Pot Penne Pasta

Assemble your ingredients, and you’re just minutes away from having a big pot of penne pasta on the table. Here’s how you make this yummy one-pot meal:

Chop your veggies, and put them in a large pot with the penne, lemon juice, lemon zest, red pepper flakes, and 2 1/4 cups water.
Bring to a boil, cover, and cook for 8 minutes, stirring once around the 5-minute mark.
When the pasta is tender, remove the pot from the heat, stir, and let it sit for a couple of minutes so the sauce can thicken.
Top it with Parmesan, parsley, pine nuts, and/or my vegan h**p seed “cheese,” and enjoy!

Seeds, in general, are considered excellent sources of potassium, magnesium, and calcium.

Plant seeds are also a good source of polyunsaturated fatty acids (PUFAs) and antioxidants.

The fatty acids in pumpkin seeds contain a range of beneficial nutrients, such as sterols, squalene, and tocopherols. Researchers have described the fatty acid profile of seeds, grains, and legumes as “favorable.”

Bone health

Anyone else grow up on pasta?! I’m fairly certain we had some kind of pasta dish for dinner at least once a week.

As the weather started to get warmer, we’d gravitate towards pasta salad – easy to throw together, loaded with chopped veggies and flavorful dressing.

pasta salad becomes a staple once again. I have a feeling this Southwest Pasta Salad is going to be my new go-to this season. Made with gluten free brown rice and quinoa pasta, corn, black beans and fresh veggies – ready in less than 20 minutes!

Pasta Salad Ready in 20 Minutes
Pasta salad is a great dish to prepare ahead of time, but it’s also ready in about 20 minutes time!

As the water boils for the pasta, chop the veggies, rinse the canned corn and black beans, then add to a bowl.

You can also start on the salad dressing while the water comes to a boil/pasta is cooking.

TIP: cook the pasta al dente for this pasta salad.

To make the dressing: You’ll need boiled water to let the cashews soak and soften for 15 minutes. Then rinse, drain and add to a blender with the rest of the dressing ingredients. Taste test as you blend, adding more salt, or a little more adobo sauce for a kick or lime juice for extra tang.

After you’ve cooked the pasta, then drained and rinsed in cold water, add to the bowl of veggies and toss with the dressing.
