“क्या अंडे खराब हो गए? क्या मैंने इन्हें बिगाड़ दिया?”
अच्छी खबर यह है: आपके अंडे बिल्कुल सुरक्षित हैं और खाने लायक हैं।
यह हरी परत न तो फफूँद है, न खराब होने का संकेत, और न ही अंडे के पुराने होने का प्रमाण। यह सिर्फ एक हानिरहित (हालाँकि देखने में खराब लगने वाली) रासायनिक क्रिया है। और एक छोटा-सा बदलाव करके आप इसे हमेशा के लिए रोक सकते हैं।
हरा छल्ला क्यों बनता है?
यह पूरी तरह रसायन विज्ञान और समय पर निर्भर करता है:
अंडे की जर्दी में आयरन (लोहा) होता है।
अंडे की सफेदी में सल्फर होता है।
जब अंडों को ज़्यादा देर तक या बहुत तेज़ उबाल पर पकाया जाता है, तो सल्फर से हाइड्रोजन सल्फाइड गैस बनती है।
यह गैस जर्दी के आयरन से मिलकर फेरस सल्फाइड नाम का यौगिक बनाती है, जो जर्दी के किनारे हरे-धूसर रंग की परत के रूप में दिखता है।
