How to buy and use almonds?

Not all almonds are created equal — you definitely want to avoid almonds and any nuts coated in sugar, hydrogenated oils and tons of sodium. Many nuts undergo processing that lower the nut’s health benefits. For example, by heating nuts to very high temperatures, some of their antioxidants can be destroyed.

One downside of consuming almonds produced in the U.S. is that United States law demands that all raw almonds be pasteurized or irradiated before being sold to consumers. According to the Department of Agriculture (USDA), there are several mandatory pasteurization treatment processes to reduce the level of potential contamination in almonds “without diminishing the product’s quality, nutritional value or sensory qualities (taste and crunch).” These include: oil roasting, dry roasting and blanching, and steam processing.

Almonds contain natural fatty acids and oils that are sensitive to high heat, so when they’re highly processed it’s possible to turn these oils “rancid.” For example, when almonds are roasted, they’re usually soaked in hydrogenated or GMO oils, a fat that’s harmful and promotes heart disease.

As a rule of thumb, the less processing done to almonds the better. Preshelled and roasted almonds are likely less beneficial than raw almonds still found in their natural casing.
One step that can actually increase the nutrient content of almonds is soaking and sprouting them. Soaking and sprouting almonds removes some of their naturally occurring antinutrients that block the body from absorbing some minerals. I like to soak mine overnight for 12–24 hours in a big bowl, covering them with water and rinsing them the next morning.

65 Percent Indian Non Veg Diets are Protein Deficient..!
HYDERABAD: Research firm IMRB’s findings of a nationwide study on ‘Understanding Protein Myths & Gaps among Indians’ covering 1,800 respondents across east, west, north, south regions has revealed significant gaps in both awareness levels on protein and its consumption. Protein is one of the fundamental nutrients essential for the human body, which is duly acknowledged by the respondents. Respondents believe that protein is essential for children’s growth; enhances mental sharpness; essential for muscle building; is good for immunity and enhances beauty, is good for skin, and hair quality.

Among nutrients endorsed for their health benefits by the respondents, protein has the highest average endorsement i.e. 53%, with calcium at 48%, vitamins at 43%, iron at 34% and carbohydrates at 32%. Alarmingly, what is the adverse impact of protein deficiency is not well understood among Indians in general, with only 1/3rd strongly endorsing that lack of protein can cause weakness and fatigue.

The study, involved analysing the diet patterns of respondents, to understand if the Indians are consuming the prescribed levels of protein in their daily diets, which is a function of their body weight. Alarmingly, it was found that Indians suffer from a significant protein inadequacy, with 73% of Indians consuming diets being protein deficient.

The most protein deficiency was found among vegetarians with an alarming 84%. Contrary to the popular belief, what is interesting that not all non-vegetarian diets provide adequate protein, as 65% of Indian non-vegetarian diets were found to be deficient in prescribed levels of protein as well.

In a region wise analysis of protein deficiency, Lucknow is the most protein deficient city i.e.90% protein deficiency, followed by Ahmedabad and Chennai at 84%, Vijayawada at 72%, Mumbai at 70%. Only Kolkata has less than half of population suffering from protein deficiency in their diets at 43%.

A closer look at the various consumer segments find that protein deficiency is highest among men with families at 75% and mothers at 72%.

The reason behind protein deficiency is explained by the fact that Indians also suffer from poor awareness levels on protein. 93% of Indian’s interviewed are unaware of their ideal protein requirement, with pregnant ladies on the top at 97%, followed by lactating mothers at 96% and adolescents at 95%. What is even more alarming is that Indians suffer from many myths when it comes to their understanding of the sources of Indians, its role.

Go beyond just using peanut butter on a toast, and get innovative with it for healthy options. With increasing awareness about super foods and their health benefits, peanut butter has now made its way to most of the Indian households. It is rich in proteins, energy, carbohydrates and good fat.

For vegetarians, it can be added to pulses, baby spinach roasted peanut bowl, basil peanuts pesto or sesame peanut chikki. Peanut Butter also goes well with pork and prawns recipes and even pairs very well with tofu.”

* Peanut Butter Museli Bar: Eat healthy and tasty muesli bars while on the go. To make delicious bars add muesli, sesame seeds, coconut, and cinnamon powder and nuts in a pan and dry roast all. In another pan cook peanut butter, honey and dates for one minute. Pour the peanut butter mixture in the bowl with the dry ingredients and fold the ingredients together, freeze and serve.

* Bengal PB Chop: Grace your snack time with easy to make peanut butter chops. Make round balls from a mixture of cooked green chili, ginger, beetroot, potato, carrot, red chili powder, cumin powder, coriander powder. Stuff them with a mixture of peanut butter, raisins and nuts. Then make cutlets and deep fry with coating of suji and breadcrumb.

* Peanut Butter Chicken Skewers: Give a delicious twist to chicken with Peanut Butter. Prepare a mixture of yoghurt, peanut butter, coriander leaves, garlic, salt and red chilli for marination. Place chicken alternatively in skewers and refrigerate for 30 minutes. Heat oil in a non-stick pan (medium flame) and grill skewers for three to four minutes from both sides or until cooked.

* Thai Style Peanut and Vegetable Curry: In a blender jar, add garlic, onion, red chilli, turmeric powder, cumin powder and 50 ml water and grind it to form a thick paste, cook the paste for three to four minutes till dry. Add coconut milk, peanut butter, coriander, remaining water, salt and cook for 2-3 minutes until sauce thickens. Then add lemon juice, broccoli, mushroom, carrot and pineapple. Serve hot with boiled rice.

* Fitness PB Smoothies: Smoothies are a perfect filling snack and quick on-the-go choice for both adults and children. Choose your favourite base — be it strawberry or banana or chocolate dessert topping. Add peanut butter, yoghurt, milk, honey, ice-cubes and blend it until smooth in a blender jar. Pour in a glass and serve chilled.

Protein intake: satisfaction given to self or a myth..!

The diet you are consuming might not provide you with high proteins. As per a study conducted by an international research firm Kantar IMRB, many cities of India are highly protein deficient. The study offered some shocking insights on the eating habits of Indians, percentage of people having protein inadequacy and the misconceptions related to protein.

The survey was done on 1800 people from all across the country, where their diet patterns were analysed. The results revealed that Indians are suffering from severe protein inadequacy as 73 percent of them are on a diet which is not so high on proteins. The shocking fact was that 84 percent of the vegetarian diets are low on proteins. It is generally believed that non vegetarian food offer sufficient protein, however, the report stated otherwise. It indicated that 65 percent of the people who consumed non-vegetarian food were deficient in protein.

The respondents were not very well aware about protein deficiency as 73 percent of them believed that only green vegetables can provide them enough proteins. They are not well versed with the fact that there are other sources of protein as well, other than leafy vegetables.

Coming to the most protein deficient cities in India, it is the city of Nawabs, Lucknow which is leading the list. The capital of Uttar Pradesh is known for its delicacies like tundey kebabs and biryanis. Despite that 90 percent of the city's population is suffering from protein deficiency. The second position is jointly held by two prime cities of India, Ahmedabad and Chennai. As a matter of fact, 84 percent of the population in these cities have protein deficiency. Vijaywada in Andhra Pradesh comes in third position with 72 percent. Mumbai and Delhi bag the fourth and fifth place with 70 percent and 60 percent of the people having protein inadequacy. New Delhi is known for its mouth watering dishes but despite this the city's population is protein deficient.

Indeed, protein deficiency has turned out to be a major cause of concern in India. Proteins are very beneficial for the body as they help build and repair the tissues. Therefore, one must include milk, fish, eggs, quinoa and soya in the diet and consume them on a regular basis.
