Summers are incomplete without a mangoshake everyday.

Let look into this simple 5 minute recipe.

Peel and cut the mangoes , add half water & half milk as per the consistency you like.

Sugar, cardamom and cashews to be added for taste while grinding the mixture.

Keep the sabza in water for 10 min. Then add roohafza to it.

Cut the half mango in small square pieces .

Now add the mangoshake to glass till half level , top it up with sabza and roohafza mix very lightly so that it doesn't mix and remains at top. Now again lightly add the cut mangoes on top.

Baiganpalli or Alfonso are best mangoes for the mangoshake. You may try other local sweet varieties for the recipe.

Dum Aloo

The magic of dish is in ginger, ghee, cardamom, kashmiri mirch and curd.

Partially boiled potatoes dipped in ginger water are deep fried in oil.

Then the curry is made in ghee with pinch of asafodeia and the Kashmiri mirch water solution is put to boil in the ghee. Then add the blended curd to it and boil it in low flame for a 2 minute. Then add the powder of fennel seeds, bay leaf, poppy seeds, jeera and cashews which are roasted. Bring the curry to boil and add ginger powder.

There is no garlic or onion in the gravy

Now add the fried potatoes and let them boil in the curry for 6-8 minutes.

Now add Kasturi methi and salt for flavor. I add a little sugar as well but that is just as per my taste not so much so part of recipe.

Let the curry boil for 2 more minutes and then you may transfer to serving bowl. I didn't had cream hence did not used, you may use so for garnishing.
