It was world vegan day yesterday, so I’m just taking the opportunity to show off some of the most incredible food I eat as at home as a vegan (also whole foods).

May I also add that, I have been vegan for 14 years, I don’t take protein powders and I’m not protein deficient yet 😂

Honestly I’d skip the finest restaurant any day to eat what I do at home, because it is so nourishing and delicious at the same time!

Veganism goes much beyond food, it is an ethic that flows into all of life’s choices - clothes, daily care products, make up and everything else.
But yes - food is a doorway for many, like myself and has been one of the best commitments I have made..

Besan Badam Barfi RECIPE

Can also be made with Sattu!

Ingredients
✨2 cups chickpea flour (besan) 
✨1/3 cup of soft pitted dates.
✨1/4 cup soaked almonds
✨¼ cup cranberries 
✨Pinch of nutmeg and cardamon
✨Slivered pistachio or almonds to garnish
✨3 tbsp almond butter (optional)

Method

1. Heat a thick bottomed pan. Dry roast the chickpea flour on medium flame, for approximately 15 minutes or so, till well roasted. If using Sattu, you can skip this step. Set aside to cool.

2. Grind the soaked almonds with 1/3 cup of water. Once done, add the dates into the grinder and grind again, until the dates are well blended.
3. Add the almond dates mixture to the flour along with nutmeg and cardamon. Mix well to a smooth dough. Check and adjust sweetness.
4. Flatten the dough with a rolling pin into 1/2 inch thickness. 
5. a butter/parchment paper in a dish and place the dough in it. Garnish with almond butter and slivered almonds. Cut into a shape of your choice. Freeze for 2-4 hours.
Enjoy 🥰

Refrigerate the remaining. It stays in the fridge for upto a week . Makes 10 -12 pieces.

CRISPY OIL FREE SWEET POTATO RECIPE 🍠

Ingredients :
 
🥕½ cup very finely chopped carrot (the fine chopping provides a great crunch factor in every bite of the tikki)
🌰¼ cup very finely chopped beetroot
🍠1 cup boiled and mashed sweet potato
🌶️½ finely chopped green chilly
☘️¼ cup fresh chopped coriander
🌱1 tsp fennel seeds
🧂1 tsp rock salt
🥭1.5 tsp amchur powder (optional)
 
For the peanut powder coating :
 
🥜¼ cup peanuts
🧂½ tsp salt
🌱½ tsp cumin powder
 
Method
 
1.     Dry roast the fennel seeds on medium flame in a thick bottomed steel wok. Add the chopped carrot and beet, add few tbsp of water and cover it for 3 min until cooked el-dente. Set aside to cool.
2.     Mix the cooked carrot and beets, with mashed sweet potato, coriander, salt and green chilly.
3.     Shape them into round or oval patties.
4.     For the peanut powder, make sure the peanuts are absolutely dry. Place them in a chutney jar and pulse lightly 2-3 times to achieve a course powder. DO NOT over do this as we want a course powder, not a sticky mixture.
5.     Add salt and cumin powder to this and mix well.
6.     Coat the tikkis well on all sides with this powder and cook them without oil, on a cast iron or ceramic pan. The peanut powder coating will ensure that the tikkis don’t stick.
7.     Serve them fresh with chutney.

These recipes were a part of a 21 day Salad challenge that I did during Covid time and 1000’s of participants joined in.. a part of the proceeds were donated to charities looking out for migrant labourers and community animals..

It was a win win, and a time I cherished deeply as so many of us came together to care for ourselves and in the process support others 🌸

I was in Chennai during the August 15th long weekend and had the opportunity  to connect with members of my online wellness community. After knowing each other over zoom and whatsapp for over years, meeting in person was honestly such a delight ❤️
 
The first few pictures are from a lunch gathering at .
Was totally blown with their salads and vegan sourdough pizza.
It was also a total honour and inspiration to meet Dr. Minnie Mathan (87 years young), the senior most member of our community. She is so radiant and shared that she turned vegan at the age of 82 and goes to the gym every day 💪
 
The second meet up was a Food Meditation workshop at , a 100% vegan café run by 2 passionate vegans Gayathri and Shankar. They also have whole foods plant based items on their menu and everything I tried was totally delicious 😋

The event was a houseful and everyone went back feeling deeply connected with their food and with each other 🌈
Incidently, one of my team members Lakshmy also belongs to Chennai and I was grateful she managed all the coordination and organization very smoothly.
 
I was also pleasantly surprised that Chennai is extremely vegan friendly and some of the other places where I enjoyed meals were : Kerala food at , and many veganizable options at .in and .
 
Grateful for a weekend of heart to heart connections and beautiful memories 🌸

Our Story

Health Nut is started by Bhavna Kapoor, a certified Health Coach from the institute of Integrative Nutrition New York. Bhavna is a Thereaputic Chef, has 30 years of training in Iyengar Yoga and is deeply devoted to the study and practice of healing through the elements of nature. Bhavna’s personal experience of curing chronic sinus, gastric problems and borderline piles through shifts in diet and lifestyle gave her a clear mission – to Make Healthy Living Simple.

Bhavna helps people with Holistic and Nutrition Consults as well as runs Wellness Retreats across India.

She has an online cooking show ‘Healthy Vegan Cooking’ on on #Famefoods Youtube.
