Coffee Bean Cookies
Ingredients
- 2 Tbsp freshly brewed coffee, cooled to room temperature
- 1/3 c salted butter, softened to room temperature
- 2/3 c powdered sugar
- 1 egg yolk
- 1 tsp vanilla extract
- 1 c cake flour* (see "notes" below)
- 3 Tbsp cornstarch
- 2 Tbsp cocoa powder
Preparation
First, cream butter and powdered sugar.
Then whisk in the egg yolk, brewed coffee, and vanilla extract.
In a separate bowl, mix together the cake flour, cornstarch, and cocoa powder.
Slowly add dry to wet ingredients. The resulting batter will almost look like cake frosting.
Place the bowl in the fridge for 1 hour to chill, which will allow it to firm up a bit and be much easier to work with and form into coffee bean shapes.
Preheat oven to 325℉.
Using a teaspoon (a 1-tsp measuring spoon, not the one from your silverware drawer), measure out heaping teaspoonfuls of batter.
Roll the teaspoonfuls of batter between your hands, forming a ball.
Then, roll it back and forth once or twice, to form it into an oval.
Lightly press the ends with two fingers and place on a lined baking sheet.
Finally, using a toothpick, press lengthwise into the center of each cookie, about halfway down, to get that coffee bean appearance.
Bake for 12 minutes, then let cool and enjoy!

Dark Chocolate Cinnamon Easter Eggnog
Ingredients
- 4 egg yolks
- 2 cups milk
- cup granulated sugar
- 1/4 cup finely chopped dark chocolate
- 2 tablespoons unsweetened dark cocoa powder
- 1/4 teaspoon cinnamon
- 1 cup heavy whipping cream
- 1/4 cup chocolate liqueur (such as Godiva Original Liqueur)
- 1 teaspoon vanilla
Preparation
In a medium saucepan over medium heat, whisk together egg yolks, milk, sugar, dark chocolate, cocoa powder, and cinnamon. When mixture is well combined and just starts to boil and bubble, remove from heat.
Pour mixture in a bowl over an ice bath and whisk for several minutes until cool.
Whisk in cream, liqueur, and vanilla.
Serve immediately or store in refrigerator.
Top with whipped cream and cinnamon if desired.
Makes 4 (about 1-cup servings)
SNAPPY TIPS: Make sure you whisk the egg yolks and liquids well while over the heat so that the eggs dont curdle.
SNAPPY SUBSTITUTIONS: If you dont like dark chocolate you could use original unsweetened cocoa powder, and substitute your favorite chopped chocolate for the chopped dark chocolate. You can also substitute any liqueur for the chocolate liqueur.

Delicious Egg Custard
Ingredients
- 1 cup of sugar
- 1 cup of whole milk
- 2 cups of heavy cream
- Zest of 1 lemon
- 1 tsp. vanilla
- 5 egg yolks
Preparation
In a saucepan over medium heat combine the whole milk with the cup of sugar and one cup of the heavy cream. Stir until little bubbles form and the sugar has combined with the milk to be smooth.
Remove from the heat and zest either the lemon into the mixture along with the teaspoon of vanilla.
Whisk together the egg yolks with the remaining cup of heavy cream.
Heat the milk and sugar mixture and pour in the egg and heavy cream mixture, whisking as you do this. Continue to whisk over medium heat until it thickens to a desirable creamy custard..
Place in custard cups and refrigerate.

Strawberry Sauce Tartlets
Ingredients
- 3 tablespoons brandy
- 1 egg yolk
- 2 cups all-purpose flour
- 3 tablespoons ice water
- 3-4 teaspoons freshly squeezed lemon juice
- 1 tablespoon milk
- 1/8 teaspoon salt
- 2 pounds fresh strawberries, sliced
- ¼ cup sugar
- 150 gr. (2/3 cup) cold unsalted butter, cut into pieces
Preparation
Make the dough: In a food processor, pulse flour, sugar, and salt to combine.
Add butter, pulse until mixture resembles coarse meal, with a few pea-size pieces of butter remaining.

Deceptively Non-Creamy Creamy Coleslaw
Ingredients
- 1 pound red or green cabbage (about ½ medium head)*
- 1 large carrot, peeled and shredded**
- 1 1/2 teaspoons table salt
- 1/2 small onion, minced
- 1/2 cup mayonnaise
- 3 tablespoons red wine vinegar (based on preference)
- Ground black pepper
Preparation
Remove the outer leaves on the head(s) of cabbage and cut into quarters. If using one kind of cabbage use all four quarters, if using two different kinds of cabbage use two quarters of each. Using a sharp knife, take each quartered piece of cabbage and trim and discard the hard core located in the middle lower center of the cabbage. Repeat with remaining quarters.
Separate the cabbage into small stacks of leaves that flatten when pressed. Using a sharp knife, cut each stack of cabbage leaves into thin shreds. (You can also use a food processor to shred your cabbage less time, but more dishes)
Toss the cabbage and shredded carrot with the salt in a colander and set over a medium bowl.
Let stand until the cabbage wilts, at least one hour or up to four hours. Rinse the cabbage and carrot under cold running water, or in a large bowl of ice water if serving immediately. (Meg note: I accidentally skipped this step and therefore, did not season with salt at the end. It turned out fine, and frankly its one less step you have to do.) Press, but do not squeeze, to drain: pat dry with paper towels.
Combine the cabbage, carrot, onion, mayonnaise, and vinegar in a medium bowl; toss to coat and season with salt and pepper to taste.
Serve chilled or at room temperature.

Strawberry Mango Crumble
Ingredients
- 1 teaspoon baking powder
- ¼ cup brown sugar
- 3 teaspoons cornstarch
- 2 ripe mangos, peeled and chopped into ¼” squares
- 1-1/3 cup old fashioned oats
- Pinch of salt
- Whole fresh strawberries, garnish
- 6 tablespoons cold unsalted butter
- 1 tablespoon water
- ½ cup whole wheat flour
Preparation
Add the strawberries and mango to a medium-sized casserole dish. In a bowl, combine the brown sugar, cornstarch, and flour. Stir the dry ingredients to combine and sprinkle over the fruit. With a big spoon, stir fruit around so that it is coated with the dry mixture. Set aside.Preheat the oven to 350 degrees.
Add the brown sugar, flour, salt and baking powder to a mixing bowl and stir. Integrate the cold butter in by pressing it with your hands into the flour mixture. Once the flour mixture resembles small beads with the butter incorporated, pour in the oats and stir.
Drizzle the tablespoon of water into the mixture and still using your hands, make sure the crumble is thoroughly mixed.
Spread the crumble topping evenly over the fruit and bake in the oven for 35 to 40 minutes until the fruit juices bubble up and topping is slightly browned. Allow the crumble to cool about 10 minutes and serve with huge scoops of vanilla gelato (or frozen yogurt or ice cream).
