❤️✨ Veg Biryani Recipe✨❤️
Ingredients:-
For Rice:
8 cups water
2 bay leaf
1 inch cinnamon stick
1/2 tsp cloves
1 star anise
1/2 tsp pepper
2 tsp oil
1 tsp salt
11/2 basmati rice, soaked for 20 minutes
For Biryani Gravy:
2 tbsp oil
1 tbsp ghee
1 bay leaf
2 inch cinnamon stick
1/2 tsp cloves
1 star anise
1 tsp shah jeera
4 cardamom
1 onion, finely chopped
1 tsp ginger-garlic paste
2 cups mixed vegetables, carrot, gobi, peas, potato, beans, chopped
1 cup hung curd
1 tsp kashmiri red chilli powder
1/2 tsp turmeric powder
2 tsp biryani masala powder
1 tsp salt
2 tsp coriander-mint paste
1 cup water
Other Ingredients:
1/4 cup mint, chopped
1/4 cup coriander, chopped
1 tbsp ghee
1/2 cup fried onions (barista)
1/2 tsp saffron
pinch of biryani masala powder
1/2 tsp kewra essence
wheat dough, to seal
Method:-
Soak d saffron in d warm milk. Drain n boil rice in four cups of boiling salted water with green cardamoms, black cardamom, cloves, cinnamon n bay leaf, until three-fourths done. Drain excess water. Heat oil in a kadai n deep-fry d onions till golden. Drain on absorbent paper. Blanch all d vegetables separately. Drain n refresh in cold water. In a bowl, mix d vegetables with d hung curd, ginger-garlic paste, green chillies, coriander powder, turmeric powder, chilli powder, garam masala powder, salt n few browned onions. Transfer d mixture to a pressure cooker. Spread d rice over d vegetables. Sprinkle d saffron flavoured milk, coriander leaves, mint leaves, kewra essence, ginger strips, remaining garam masala powder n remaining browned onions over d rice. Seal d cooker with d lid n wheat dough n cook over low heat, till d rice n vegetables are done. This may take 20 min. Serve hot.
