🛑Recipe Alert 🛑

Veg Kolhapuri, a mixed vegetable curry with thick and spicy coconut based gravy, is a popular dish of Maharashtrian cuisine.

Recipe 👇

Ingredients:
Veggies to boil:
1 small carrot, cut into thick pieces
5 beans, chopped
1 cup cauliflower, florets
2 cups water
½ tsp salt

For Masala:
1 tsp sesame seeds
1 tsp poppy seeds
½ tsp cumin seeds
1 tsp coriander seeds
1 inch cinnamon stick
2 cloves
1 cardamom pod
4 black pepper
3 dried kashmiri red chili
2 tbsp dessicated coconut

Other Ingredients:
3 tbsp oil
1 medium sized onion, finely chopped
1 tsp ginger-garlic paste
2 medium sized tomatoes, finely chopped
1 capsicum, cubed
1/2 cup peas, boiled
½ tsp turmeric
salt to taste
1 cup water
3 tbsp coriander leaves, finely chopped

Method:
Firstly boil vegetables along with little salt for 10 mins. In kadai dry roast, sesame seeds, poppy seeds, coriander seeds, cumin seeds, cinnamon, cardamom, cloves, pepper, red chili n coconut. Dry roast n blend to smooth powder without adding water. keep aside. Heat oil n saute onions add ginger-garlic paste cook for 2 min, then add tomato n saute well. Now add capsicum n boiled peas n saute slightly. Add prepared masala n salt to taste. Saute well till oil separates from masala. Now add boiled vegetables, little water n coriander leaves.
Cover n simmer for 15 mins. Finally, serve veg kolhapuri with tandoori roti or garlic naan.

🧡🧡Kaddu Ki Kheer Recipe 🧡🧡
Kaddu ki kheer is quite relishing and healthy sweet. This delicious kaddu ki kheer is made with purest ingredients like ghee, cardamom, saffron and almonds. You can serve this sweet as warm or chilled to make any celebrating occasion wholesome and fulfilling.

Ingredients:
2 tsp Ghee
Few Cashew nuts
200 grams or 1 1/4 cups pumpkin, grated
2 cups Milk
3 tbsp Sugar
few strands Saffron
¼ tsp Green cardamom powder

Method:
First of all peel n grate d pumpkin. Heat d ghee in a pan on medium heat. Once hot n melted, add cashews. Fry till they are golden brown in color. Drain excess ghee n remove it to a plate n keep it aside. In remaining ghee, add grated kaddu n mix. Cook for 3-4 mins. It will starts to soften n shrink in size. Remove it to a plate n keep it aside. Now take milk in d same pan. And bring it to a boil on medium heat. Let it simmer for 8-10 mins. Do stir every continuously to make sure that it is not sticking to d bottom n sides of d pan. It should be reduced n thickened slightly. Now add cooked pumpkin. Also add saffron. Let it simmer for 4-5 mins. Now add sugar n mix. Again let it simmer for 4-5 mins. Now add cardamom powder n mix. Also add fried cashew n stir. Consistency of kheer should be thick. Now d kheer is ready to serve. Garnish with chopped pistachios n almonds.

Ingredients:
3 tsp oil
3 clove garlic (finely chopped)
1 inch ginger (finely chopped)
2 tbsp cauliflower (finely chopped)

½ capsicum (finely chopped)
2 tbsp cabbage (finely chopped)
4 tbsp mushrooms (chopped)
4 cup water

❤️✨ Veg Biryani Recipe✨❤️
Ingredients:-
For Rice:
8 cups water
2 bay leaf
1 inch cinnamon stick
1/2 tsp cloves
1 star anise
1/2 tsp pepper
2 tsp oil
1 tsp salt
11/2 basmati rice, soaked for 20 minutes
For Biryani Gravy:
2 tbsp oil
1 tbsp ghee
1 bay leaf
2 inch cinnamon stick
1/2 tsp cloves
1 star anise
1 tsp shah jeera
4 cardamom
1 onion, finely chopped
1 tsp ginger-garlic paste
2 cups mixed vegetables, carrot, gobi, peas, potato, beans, chopped
1 cup hung curd
1 tsp kashmiri red chilli powder
1/2 tsp turmeric powder
2 tsp biryani masala powder
1 tsp salt
2 tsp coriander-mint paste
1 cup water
Other Ingredients:
1/4 cup mint, chopped
1/4 cup coriander, chopped
1 tbsp ghee
1/2 cup fried onions (barista)
1/2 tsp saffron
pinch of biryani masala powder
1/2 tsp kewra essence
wheat dough, to seal
Method:-
Soak d saffron in d warm milk. Drain n boil rice in four cups of boiling salted water with green cardamoms, black cardamom, cloves, cinnamon n bay leaf, until three-fourths done. Drain excess water. Heat oil in a kadai n deep-fry d onions till golden. Drain on absorbent paper. Blanch all d vegetables separately. Drain n refresh in cold water. In a bowl, mix d vegetables with d hung curd, ginger-garlic paste, green chillies, coriander powder, turmeric powder, chilli powder, garam masala powder, salt n few browned onions. Transfer d mixture to a pressure cooker. Spread d rice over d vegetables. Sprinkle d saffron flavoured milk, coriander leaves, mint leaves, kewra essence, ginger strips, remaining garam masala powder n remaining browned onions over d rice. Seal d cooker with d lid n wheat dough n cook over low heat, till d rice n vegetables are done. This may take 20 min. Serve hot.

🥥☘️ Sambhar Vadi Recipe ☘️🥥
A very celebrated traditional preparation from Maharashtra, usually prepared during family get togethers. This is especially prepared during winters when desi coriander is found in abundance. "Sambhar" is a Marathi word for Coriander. Do try this recipe and share your views with me ☺️

Recipe 👇
✍️Ingredients
Filling:
Coriander leaves: 400 gms
Desiccated Coconut: 1/2 cup
Poppy seeds: 2 tbsp
Green Chili (cut): 8-10
Red Chili powder: 1 Tsp
Salt: 2 Tsp
Sugar: 1 Tsp
Lemon Juice: 2 Tsp
Cumin seeds: 2 Tbsp
For the cover:
Besan/ Bengal gram flour: 2 Cup
Maida/ All poupose Flour: 1 Cup
Oil: 4 Tbsp
Salt: 1Tsp
Red Chili powder: 1 Tsp
Turmeric: 1 Tsp
For Deep Frying:
Oil: 3 Cups
✍️Method:
Preparation for filling:
Mix all d ingredients of filling n keep it aside.
For Cover: Add all d ingredients. As per requirement, add water n prepare a dough. Make sure it is not too soft as it will lose d crispness. And, not too hard as it will break.
Knead it really well. Keep aside for 10 mins to soften it. Make tiny balls of d dough n roll it in round shape.
In d middle of d round shaped cover, add d coriander filling in rectangular shape. Put little water around d edges n fold in from all four sides. Deep fry in Oil on medium flame on both sides for around 5-6 mins. Reduce d flame in case d cover is becoming too dark.
Remove from oil on tissue paper. Serve it hot with any chutney/ sauce.

Bathua is a winter vegetable that has many benefits.
🌿low on calories thatvaid in weight loss.
🌿Rich in Fibre
🌿Bathua is known to be a blood purifier.
🌿cure constipation due to its laxative properties.

Here is an easy bathua raita recipe that you can try at home

Ingredients:-
50 gm bathua or chenopodium leaves boiled
1 cup dahi or yoghurt
3 tbsp water
1 tsp ghee or clarified butter
½ tsp jeera or cumin seeds
Few curry leaves

Method:-
Grind d boiled bathua leaves with little water n make a coarse paste. Heat ghee in a small tadka pan over medium flame. Once it heats up add jeera n heeng. When jeera crackle add curry leaves n fry for few seconds. In a medium-sized bowl, add bathua puree, yoghurt, fried cumin n curry leaves n salt. Whisk it well. Serve it with any paratha or pulao of ur choice.
