THAC KITCHEN ANNOUNCEMENT
DECEMBER 2025

Wellness Greetings!

It is December and the end of 2025 already! Has the year just zipped past or have we grown that much older, when time expands according to our priorities and not just the turn of the pages on a calendar. If we keep a calendar at all that is!

In the West, when December settles into a period of pitch blackness contrasted by white snow and biting cold winds, an icy shroud of silence, heaviness all around, December gets "brightened" with what they call an Advent Calendar. Meaning arrival or "adventus", a period of waiting for Christmas and bright lights, candles, gifts and celebrations. This was a period for reflection and stillness too.

Today Advent Calendars in the West which are commercially sold and widely available, hold little windows for each day of the month of December. Each day opens up to little gifts, angels or Bible verses, and a bit of that anticipation to mark the turn of the year. There's nostalgia, warmth and ritual to it all. Be it for kids or adults.

For us here in Bombay, in the presence of smog instead of snow, sudden heat instead of that promised cold wave, we can still keep an Advent Calendar of our very making and meaning.

Each day from the 1st to 31st December can become a day to open windows of stillness.
To look back first and foremost of the year gone by. Okay zipped by.
What worked and did not.
The lessons learnt.
The losses we overcame.
The goodness that somehow squeezed through it all. And when we start listing these little goodies of goodnesses down, there's more than plenty that will pop up.

Each day of this month can hold little rituals of meaning we conjure. Be it lighting a lamp or cooking up a dish. Or finally getting down to creating a daily health routine for ourselves. Done regularly they fall into a practise, a rhythm, which like the seasons, keep us well and spinning. Not to mention- more ready for 2026 too!

Each day of this last month can be a conscious return to being productive in the real, sacred sense. A slowness that depends on contemplation, intention, juiced with purpose and power. It's making time dance to our choice of what we choose to do how and when.
Eating a meal can be that. The act of chewing tasting and full on mastication, of whole ingredients that nourish.
The act of moving, feeling our breath, knowing where its trapped or flowing.
And yes eating and breathing properly may not seem like high productivity targets, yet when done right- it is what tips the balance between Health and illness, nourishment and depletion.

Getting ready for December's Menus and Bookings - and this note too, has given us the time in the THAC KITCHEN to also reflect on the year gone by- be it with Menus that "made it" or some that could have fared better perhaps!
It gave us an opportunity to be more intentional of what dishes we want to serve up as our year end Menus.
We reviewed the new experiments of the year and the ones that we have forgotten to bring on too!

Very few of us actually know how to make a nourishing yet quick meal for ourselves!

It is so much easier these days to delegate this task or outsource it with just a touch of a button where varied menu options pop up too, rather than to take charge of making a meal for ourselves.

From the fear of it being complicated, tedious and time consuming to a lack of interest, or not knowing where to begin, or not being on our priority list, we have left behind and skipped this basic skill to make food.

None of us are born as great cooks- and just like we learn how to walk by practising it- making a meal and cooking for ourselves or family, can become like child's play or an adult joy.
We become slowly more selective and aware of all the nonsense chemical ingredients that go into the touch-of-a-button foods we order to our doorstep.
We are better able to guide our cooks to make the food we like. In a way that preserves their nutritional value.
Most importantly we honour our body and give it the nutrition it deserves.

THAC's BRING NOURISHMENT HOME (BNH) Workshop will help you to take baby steps into the world of nutritious & delicious food.

If you’re already a pro, it will teach you quick and easy techniques to preserve the inherent nutritional value of ingredients, in the daily meals you make.

* BNH is a demonstration oriented single Session Workshop.
* The BNH Workshop provides clarity on the
* Why & How of Food...what ingredients to use, which combinations work, while keeping that delicate balance between old familiar tastes and new methods of making dishes.
* You will learn to add variety- the all important ingredient which makes eating meals a daily delight.
* The workshop will also equip you to make all your old favourite recipes the nourishing way.
* Peer and Mentor support is provided for 2 months, post the Workshop, on the WhatsApp platform.

This will continue thereafter by you joining a bigger group of past workshop participants, where kitchen stories are shared and dished out, with recipes, photos and more.

N = NATURE IN NOVEMBER

Wellness Greetings!

There's just that slight nip early morning and late evenings. The nights for sure are longer.
Dusk and evening falls sooner, faster and even 6pm feels more like 8 or 9pm.

Yes our earth is on her parikrama around the sun, making it get darker much earlier. That's just the way its been designed, our Earth's rotation and tilt. Mumbai's specific latitude (19°N) makes for shorter days in November...and because the Northern Hemisphere tilts away from the Sun, days get shorter- making sunsets at an average time of 5.30-6pm!

Darkness is a two-edged thing, we can make it truly dark in the way we feel- or we can use that very darkness, to seriously bring out the candles, and with it some soft warm scented light.

Nature is doing it anyway, the morning sunlight is actually more dispersed and feels gentler somehow.
Trees wear a crown of fresh lime green leaves with a touch of orangey-red shoots. The Akash-Malligai/Akash-Ganga or the Indian Cork Tree is in full unabashed bloom now, with its silvery white, headily addictive fragrant filled star drop tubular flowers. Every such tree has a carpet of white flowers under in the mornings, before they get hurriedly gathered to make Venis/garlands.
As is the Saptaparni tree/Devil's tree(!!) with an intoxicating fragrance, that blooms at night. Bougainvillea are even more starkly hued in all their glory. Be it on side roads, or compound walls, or special Nature spots like Hanging Gardens or Sanjay Gandhi National Park or the Maharashtra Nature Park- this is the time of year to step out for nature trails and walks.

As for the sabzi mandi even in amchi Mumbai.. ah! here are Winter specials all a treat..Beets are more radiant pinky purple, with their earthy sweetness, Carrots are a darker orange, less fibrous more sweet- not yet red, for which we have to wait a month or more for, Radishes & Turnips, crunchy, peppery, mildly sweet and just so so very earthy. Spinach and Mustard Greens, Kathua & the Cruciferous family of Cauliflower and Broccoli & Cabbage...Green Peas, Sweet Potatoes, Yams...even Tomatoes in Bombay taste fleshier, tartier- almost sweet! They are less green, more red for sure.

Its the occasion, to bring in the light for an afternoon meal with friends, soft jazz, music that beckons, yearns and teases, talk about the little things that matter, be it a book, a rare find in the market place, an odd bird sighted, or the sound of the Coppersmith Barbet (tuk-tuk), found on Mumbai's plentiful fig/banyan trees, who incessantly call out, almost all day now.

November is the time for coziness to settle in as the Dusk falls, as the day's deeds are done, to-do-lists are brushed aside- for today, for this day that still has the long night ahead to cuddle in with family, friends, candlelight, great conversations and good Nourishing food most of all.

‘Ghar ka khana‘ always evokes nostalgia, whether at the end of a working day or after a long holiday.
‘Ghar ka Khana’ is comfort food, which the best of Michelin Star restaurants can’t match.
Yet busyness reigns and time in the kitchen is most often what we compromise on.

What if your Maharaj, your cook/maid, prepared your food, by making it in a way that satiates and nourishes?
What if there is plenty of variations to tease your taste buds with both familiar and new flavours?
What if they are made in your own kitchen, with the highest standards of hygiene and best of quality ingredients?

THACs ‘Training Cooks’ Workshop provides a platform, to do just this.

Wellness Greetings!

Most of us think of Nourishment as solely related to Healthy Eating- to feeding our body adequately. Of fueling our body
with the necessary macro and micronutrients, of hydration and nutrient dense foods.
We look at nourishment in terms of diet- a well balanced one to support our growth and development, weight, immunity, and mental clarity - so that we can reduce the chances of illness and diseases, to keep them safely at bay.

While all the above are true and real necessities too, isn't there more to what Nourishment means, than just healthy eating?

What about feeding our mind?
Spirit and emotions?
Is it only food that feeds our body?
If Nourishment is fuel that keeps us going- what is this fuel? Where does this energy to fuel us come from? Just one source- Food?
Where exactly do the building blocks for real growth, repair and daily maintenance come from?
How do we feed this with what we need to thrive- and not just survive?
How do we energize and satisfy?
How do we find nourishment in the smallest of things,within the fast disappearing moments?

THAC KITCHEN ANNOUNCEMENT

Heat- rain-winter, all interspersed with many festivities - not to forget the full full brightly lit up moon of Sharad Purnima. October has it all as a suspense, suspended between high definition seasons and celebrations.

It's a different kind of month for us in Bombay- the heat and humidity feels like May once more, the air is thick, clothes feel heavy and sticky.
Alongside, the retreating monsoons are yet to retreat, and while a sudden downpour can feel refreshing, its been unsettling to have it rain so hard in October.
Winter though is a quiet faint step around the corner, for veggies and fruits already start looking bigger, juicier, fresher with a glisten almost.
And this year to add to all this is an October Diwali too- when all is aglow, with oil lamps, crackers, akasha deepa/kandeel & fairy lights.

As for the mithais and food excesses that storm through our insides, this month will simply have to take it all in its stride and patiently wait for November to cool things down- both within and around.
As a colleague said, "I feel like October is the evening- sandhya kaal of the year, in my head"!

Wellness Greetings!

"Across time, we’ve always met at the table,” says Lao.

Don't really know who Lao was- or when he said this, yet do know that this still holds so solidly true.
For at the table- each of our dining tables, stories, recipes, legacies, memories and flavours, all gather together to culminate in a "taste" that goes beyond the ingredients in the dishes.

This "taste" at the THAC KITCHEN, has been carefully tended to from its very first no-oil-tadka experiments, in the hands of Dr Vijaya Venkat- THACs founder.
Putting theory to practise was the fire that furiously fuelled her very many experiments. Even the flop disasters were khichdi-fied or cutlet-ed into tasty morsels. Bite by bite, camouflaged dishes by showy-presentations, she won her family and friends over with her kitchen innovations.

"Making something out of nothing", was a gift she had...like an Akshaya Patra which magically kept feeding all - and there were many many strangers friends and foes who were won over by the kind of food she made. Different, unique with an undeniably wholesome taste.

Which is what we can call as the THAC CUISINE.
Today- decades down from that little kitchen in Dr Venkat's home- the very same recipes, the kind of ingredients used, the methodology, why even some of the pots, pans and vessels in the current far more -modernised kitchen, all coalesce to create the Menus you eat, 5 days of the week at least.
For some of you, this kind of "cooking" has become an everyday thing - thanks to the principles and concepts she laid down, almost 40 years ago.

So when a box is opened, be it for Lunch or a Snack, it's like each of you are sitting together and meeting across a table, (albeit an invisible one!), with Dr Venkat sitting at its head- sharing and tasting a meal, together.

To us, that's the tastiest kind of meeting/eating -ever!
