Labour snacks! I’ve been busily making these the past couple of days

🍋🥥 lemon coconut energy balls

🌰🍫 chocolate and hazelnut bites (taste like Nutella!)

☀️🥕 morning glory muffins

🥜🍫 peanut butter and chocolate chunk energy bites

Hoping my labour won’t last so long that I manage to eat all of these 😵‍💫 but I’m hoping I’ll have some left over for the early days when I’m adjusting to life with a newborn! 🥰

I made this yummy spicy crispy chicken from a recipe kindly shared by a lady in our sustainable cooperative group. I’ll just paste it here but I can’t take the credit for it!

💚 It can also be made with tofu, fish or veg.

💚 Ingredients
* 3 boneless, skinless chicken thighs or substitute
* 1 cup almond flour
* 3 tbsp paprika
* 1 tbsp fresh ground black pepper
* 1 tbsp garlic powder
* 1 tbsp onion powder
* 1 tbsp celery salt
* 1/2 tbsp dried mustard
* 1 tsp cayenne pepper
* 1/2 tbsp Himalayan pink salt
* 1 egg

Instructions
1. In a mixing bowl, combine the almond flour and all spices; mix well
2. In a separate bowl whisk the egg
3. Put a layer of the spice mix on a plate
4. Using a fork or set of tongs, dip chicken thighs into the egg and place on the plate to coat thickly and evenly
5. Place the chicken thighs in the air fryer basket
7. Set your air fryer to 390°F/200C for 16 minutes
8. Alternatively, you can bake it in the oven on a baking sheet for 30 - 35 minutes at 400°/210C
9. Let the air fryer work its magic and gobble down!

💚 I cooked it at 170°C for 25 minutes but I only used bite size pieces…

I’ve been going for gentle walks in the lanes near the house these past few months but really needed a change of scene so I went up to the north coast and felt so much better for it 💚 I needed to be surrounded by green and no cars 😷

Bump and I sat down and looked at the scenery 🥰

Whilst I was sitting there I was thinking about how important it is to look after my health in this way particularly whilst pregnant with a girl! 💕

A girl’s ovaries and eggs will have developed by around week 20 of pregnancy, that means our daughter already has her ovaries and eggs in place ready for when she’s born (although she won’t be putting these into use for a good number of years!!😉)

So in effect I’m not only carrying my daughter but my grandchildren too! Quite a responsibility hey 😅

This is where epigenetics play a role in the health of future generations; our food and lifestyle choices impact the health of the following two generations.

Similarly, our health will have been affected by the food and lifestyle choices of our parents and our grandparents!

The impact can flow down through 2 generations of genes 🧬 which does make you stop and think about what we can do now to preserve the health of our descendants 💚 and this applies to men and women as children inherit both our genes!

This is why I choose to avoid as many chemicals as I can and to live as naturally as possible🌱

I do enjoy eating naughty treats every now and then 🍰🍫🍕annoyingly more so during pregnancy due to carb cravings and aversions to healthy food 🤷🏻‍♀️ why oh why?!!!

I haven’t posted any pregnancy pictures because I don’t really like sharing my private life too much on social media ... but today I’m 28 weeks and officially in the 3rd trimester so 🥳🥳🥳

I’m feeling pretty exhausted at the moment 😴 I could sleep all day, 8-9 hours a night doesn’t seem to be touching the sides at the moment 🤷🏻‍♀️

My legs also constantly feel like I’ve run a marathon despite no running since January 😳 (so looking forward to running again after!) and my arms feel like I’ve been lifting heavy weights all the time too!

🥦 broccoli still makes me feel 🤢 amazing how your taste buds change during pregnancy - I really sympathise with my clients now who struggle to eat more veg and crave white carbs - I TOTALLY UNDERSTAND!! 😂

I really am enjoying this pregnancy though, connecting to the little life growing inside my body and feeling her move around is just magical 🥰

Hence the lack of nutritional social media posts because I’m tired and feel like retreating at the moment and focusing my energy on the task at hand!🤰🏻

How was your weekend?

Here is my energy formula smoothie! A lot of clients come to see me with blood sugar issues... do any of the following sound familiar?

🟢 feeling "hangry" (you know that feeling of being really irritable when you get hungry!)

🟢 shaky

🟢 dizzy

🟢 anxious

🟢 headaches

🟢 frequent cravings for sugary and carbs foods

🟢 poor focus and concentration

🟢 ongoing fatigue not resolved by sleep

🟢 nausea

🟢 feeling overwhelmed

🟢 constantly feeling hungry

These can all be signs that your blood sugar is out of control...!

🍞 Perhaps you're eating too many carbs, or the wrong types of carbs.

🏔 This can result in a spike of sugar in your blood (all carbs break down to glucose which is effectively sugar). Your pancreas releases insulin which signals to your cells to absorb the glucose from your bloodstream which eventually leads to a sugar crash, where you start to experience the symptoms above.

🌰 Having fat or protein with your carbs helps to slow down the release of glucose into your bloodstream, which keeps your energy levels more stable.

😁This is why this smoothie formula contains fats and proteins!

So happy to find some Granny Smiths there today! I love them and haven’t had them for years 🍏🍏🍏

Plus peaches, nectarines and apricots 🍑 and rhubarb (I can make into crumble or stewed fruits😋😋😋)

So grateful to have organic produce 💚💚💚it’s a more sustainable choice for the environment and it’s better for your health 😉

❓Why? Because the fruits and vegetables have had to fight off the bugs themselves so they have a higher content of nutrients than those which are grown with pesticides and herbicides.

Plus they don’t contain these chemicals to begin with ✅

But if you can’t find organic remember there is always the dirty dozen and the clean fifteen, or you can wash your produce in bicarb of soda or apple cider vinegar to clean off pesticide residue 🧼

🥺 In our culture this is part of our lives where women may feel embarrassed or ashamed to talk about what is happening to their bodies, which is very sad as in some cultures, when a woman reaches this stage in her life she is seen as a wise woman whom people go to to seek advice or counsel!

❤️ The menopause is an inevitable stage in a woman's life, and preparing for it properly (ideally 10 years before its onset, so early 40's) can help to alleviate many of the symptoms that arise.
