No Amount of Processed Meat Is Safe, Study Finds

New research from the University of Washington’s Institute for Health Metrics and Evaluation (IHME) has found that even small amounts of processed meat may increase the risk of serious health conditions. After reviewing more than 70 studies involving millions of participants, scientists discovered that eating just one hot dog per day was linked to an 11% higher risk of type 2 diabetes and a 7% higher risk of colorectal cancer compared to none.

The analysis identified processed meats—such as bacon, sausages, ham, salami, jerky, and other smoked, salted, or cured products—as key contributors to these risks. It also found that ultra-processed foods, including sugary drinks and trans fats, have notable health impacts. For instance, consuming one additional sugar-sweetened beverage daily increased diabetes risk by 8% and heart disease risk by 2%, while even small amounts of trans fats raised heart disease risk by 3%.

Although the data relies on self-reported dietary habits and observational studies, the researchers used a conservative approach, suggesting that the true risks may be even greater. Their conclusion is straightforward: there is no completely safe level of processed or ultra-processed food consumption.

While such foods offer convenience and longer shelf life—especially where access to fresh options is limited—their long-term effects on health remain concerning. Reducing consumption, rather than seeking a ā€œsafeā€ threshold, appears to be the most effective step toward better health.
