Eating & cooking without Gluten

The grains that contain gluten include wheat, rye and barley. Any food containing these grains should be avoided in case of elevated reaction to Gliadin(found in gluten). Better to avoid all foods containing gliadin/gluten. Avoid: breads, rolls, chapattis, pancakes, wafers, cakes, biscuits, breakfast cereals, pizza, pasta, powdered drinks, beer, most spirits, ready-made meals...

Useful egg substitutes:
1- 1 Tbsp chickpea or soya flour + 1 Tbsp water.
2- 1 Tbsp arrowroot + 1 Tbsp soya flour + 2 Tbsps water.
3- ½ Tbsp shortening (such as butter) + 2 Tbsps flour + ½ teaspoon baking powder + 2 teaspoons water.
4- Banana mashed or blended to use as an egg replacer in baked goods such as muffins, pancakes…
5- 50 ml white sauce can be used for binding as in baked goods.

Some useful tips for substituting dairy-free products in recipes:
1- Do not add soya milk to boiling drinks as it tends to curdle.
2- Grate soya hard cheeses on the fine part of the grater as they do not always melt very well.
3- Use plain dairy-free yoghurts (eg soya) or coconut milk to make curries, stroganoffs, creamy sauces and dips.
4- Egg white replacer can be used to make dairy-free whipping cream.

Flexitarian, vegetarian, or Vegan?

flexitarians are semi-vegetarian their diet is largely plant-based but occasionally includes meat.
Vegetarians do not eat meat, poultry, or fish, but they do eat eggs, cheese, and honey.
