A spice masterclass - the essentials you need in your spice collection🤎

Let me know below what you want to learn about next!

Ingredients for garam masala:
4 Tbsp cumin seeds
2 Tbsp coriander powder
2 bay leaves
1 tsp peppercorns
6-7 cardamom pods, seeds removed
10-13 cloves
1 tsp mace
1/4 tsp cinnamon

On low heat, roast all ingredients for 2-3 minutes. Let it cool down completely and grind it fine.

This is my favorite thing to make for our Super Bowl party! 🏈

Who are you rooting for?

Ingredients:
* 8 oz. Cream cheese (at room temperature) 
* 4 oz. Sharp cheddar cheese (I used Tillamook extra sharp cheddar) 
* 1/4 cup Parmesan cheese  
* 2 Tbsp Green onions, sliced  
* 1 tsp Worcestershire sauce  
* 1/2 tsp Lime juice 
* 1 tsp Sriracha sauce  
* 1/2 pack of ranch dressing  
* 1 1/2 Tbsp Jalapeño pepper, chopped  
* 1/2 Tbsp Bell pepper, chopped  
* 1 Tbsp Red bell pepper, chopped  
* 2 Tbsp Red onions, chopped  
* 1/2 Tbsp Dijon mustard  
* 1 Tbsp Cilantro  
* 1/2 tsp Salt & 1/2 tsp black pepper  
* 1/2 cup Crushed almonds and pecans.  
* Cheese to make lace 
 
Method  
 
* Mix everything together by hand or with a mixer.  
* Put it in a plastic wrap and keep it in a fridge for half an hour.  
* Make it into a football shape.  
* Dip in almond and pecan mixture.  
* Make the lace with sliced cheese.  
* Serve it at room temperature, can freeze it too.

Zeera Aloo - A popular North Indian dish made with potatoes (aloo) sautéed with cumin seeds (zeera) and spices🤎

* 8 Red potatoes (about 2lbs) wash, peel and cut into 1 inch cubes. Boil until 3/4 done (4 minutes), drain and keep it aside. 
* 2 Tbsp Ghee  
* 1 tsp Cumin  
* Pinch of Hing  
* 1 cup Onions, chopped  
* 1 tsp Ginger, chopped  
* 1 tsp Garlic, chopped  
* 1 tsp Green Chillies, chopped  
* 1 tsp Coriander powder  
* 1/4 tsp Turmeric  
* 1/2 tsp Kashmiri mirch  
* Salt to taste  
* 1/2 tsp Mango powder  
* 1/2 tsp Chat masala  
* 1/2 tsp Cumin powder  
* Cilantro  
 
Method  
 
* Heat ghee and add cumin seeds and hing.  
* Add onions, garlic, ginger and green chilies.  
* Sauté until light brown. Add coriander powder, mirch & turmeric.  
* Add potatoes and stir on medium heat for a few minutes. Cover and cook on low heat for about 5 minutes or until done. 
* Add salt to taste.  
* Add mango powder, chat masala, cumin powder and cilantro.

Methi Paratha | A light and flavorful paratha with fresh fenugreek 💛

Have you made methi parathas before?

Ingredients
* ��2 cups Whole Wheat Flour
* ��1 cup Methi leaves, wash, pick, drain and chopped
* ��1/4 cup Plain yogurt
* ��1 Green chili, chopped
* ��1 tsp Ginger, chopped
* ��1/4 tsp Carom seeds
* ��Pinch of turmeric powder
* ��1/4 tsp Cumin
* ��3/4 tsp Salt
* ��1 Tbsp Oil
* ��1/2 cup Warm water

* Mix everything and make a soft dough. Can do it by hand or use the machine. Add water slowly.
* ��If kneading by hand, rest it for 1/2 hour covered.
* ��Heat a flat pan on medium high heat.
* ��Take some dough and roll it into a circle. Apply a little ghee and fold it into a square.
* ��Roll it again and cook on both sides

A quick, simple and delicious Indian trail mix that is perfect for snacking on at tea time or you can take it on hikes and picnics!

What would you add to this trail mix?

Ingredients  
* 4 cup Puffed rice 
* 1 cup Raw peanuts 
* 2 Tbsp Olive oil 
* Handful curry patta  
* 1/2 cup Coconut pieces 
* 1/2 cup Raw cashews 
* 1/2 tsp Turmeric  
* 1 tsp Cayenne pepper or to taste 
* 1 tsp Chat masala  
* 1 tsp Mango powder 
* 1/2 tsp Black salt 
* 1 cup Roasted Chana 
* 1 cup Sev 
* 1/2 cup Moong dal, fried 
* 1/2 cup Thin sev 
* 1/2 tsp Salt 
* 1 tsp Sugar 
 
Method  
 
* Put puffed rice in 250 degrees F. oven for a few minutes until little crisp.  
* Put raw peanuts in microwave oven on high for one minute, stir and repeat it three times until crisp.  
* Heat oil on medium heat, add curry patta, stir for couple of minutes until crisp.  
* Add coconut and cashews and stir for a minute or so until light brown.  
* Add spices and mix.  
* Add rest of the stuff starting with puffed rice so it gets all the spice flavor.  
* Let it cool down and store it in a tight lid container.

These masala chickpea puffs are full of protein and flavor! 🤎 A perfect and healthy snack that takes only 15 minutes to make.

You can save these chickpeas in an air tight container to last all week!

Ingredients  
 
* 1 can chickpeas (1 1/2 cup, drain, wash and dry with a towel) 
* 1 Tbsp Olive oil 
* 1 tsp Cayenne pepper  
* 1/2 tsp Paprika   
* 1/2 tsp Chat masala  
* 1/2 tsp Black salt  
* 3/4 tsp Kosher salt 
* 1 Tbsp Gram flour( besan) 
 
Method 
 
* Preheat air fryer at 300 F  for about 10 minutes.  
* Put chickpeas in a mixing bowl  
* Add oil and stir.  
* Add all the spices and mix. 
* Line the air-fryer basket with non stick foil and spread the chickpeas on top of it in one layer.  
* Cook it at 300F for 15 minutes. 
* Stir every few minutes.  
* Leave the chickpeas in the warm oven for next 10 minutes after you turned it off to get it crispier.  
* Could use the regular oven too.  
* To serve, either serve it like this or squeeze little lime juice and chopped cilantro and enjoy it with a cup of hot Chai!

We love making this sweet saffron rice for Vasant Panchami and other festivals💛 Vasant Panchami (Jan 23rd) is a festival to celebrate the arrival of spring. Watch for my food critic’s review😊 What dishes do you make for festival time?

Ingredients  
* 1 cup Basmati rice, wash and soak for half hour, drain 
* 5 Tbsp Ghee  
* 1 Tbsp Cashews, chopped  
* 1 Tbsp Almonds, chopped  
* 1 Tbsp Pistachio Nuts, chopped  
* 1 Tbsp Dry coconut pieces, chopped  
* 2 Tbsp Golden raisin  
* 4 Cloves  
* 2 Green cardamom pods 
* 1/2 tsp Saffron  
* 1/2 cup Sugar 
* 1 cup hot water 
* 1 tsp Green cardamom ground or crushed  
 
Method  
* Heat 2 Tbsp ghee on medium heat.  
* Add the nuts and stir for a minute or so and take it out.  
* Add 1 Tbsp more ghee to the remaining ghee and add cloves and green cardamom pods 
* Add water and saffron.  
* Now add drained rice, mix. Cover the pan and cook for about 10 minutes until rice is 80% cooked.  
* Add sugar, cardamom powder and nuts(save 1/4C for garnish) 
* Cover and cook for about 5-8 minutes  
* Garnish with nuts and serve hot.

This kheer is one of my husband’s all time favorites. It took me less than 30 minutes to make and only uses a few ingredients.

Ingredients  
 
* 2 Tbsp Ghee  
* 1 cup Semai (roasted vermicelli) 
* 4 cup Half & half 
* 1/2 cup Sugar 
* 3 Tbsp grated khoa(mawa) 
* 2 Tbsp Almonds, sliced  
* 2 Tbsp Golden raisins  
* 1 Tbsp Pistachios, sliced  
* 1 tsp Chiroli (chironji, optional) 
* 1 Tbsp Cashews, chopped  
* 1 Tbsp Coconut, chopped  
* Pinch of saffron  
* 1/2 tsp green cardamom powder  
 
Method  
 
* Heat ghee in a pan on medium heat and stir semai for a few minutes until light brown.  
* Boil half & half in microwave for 9 minutes on high.  
* Add boiled half and half to semai and let it come to a boil while stirring it all the time.  
* Add grated khoa (mawa) to give it a creamy taste.  
* Add sugar& nuts and stir.  
* Put saffron and cardamom and let it simmer on low heat for about 5 minutes.  
* Cool and garnish with nuts.
