Pernah tak anda nampak pengendali makanan bungkus nasi, gaul sambal, susun lauk, pegang pinggan, kemudian terus hulur pada pelanggan.

Nampak remeh, tapi dalam kerja makanan, “benda kecil” inilah yang paling mudah jadi punca pencemaran.

Satu tempat yang paling senang simpan kotoran tanpa kita sedar ialah bawah kuku. Walaupun tangan nampak bersih, ruang bawah kuku boleh simpan bakteria dan kotoran halus, dan ia susah dibersihkan kalau kuku panjang.

Sebab itu garis panduan kebersihan tangan tekankan kuku semula jadi perlu pendek. 

Kajian juga pernah sebut dengan jelas, pengendali makanan yang kuku tidak dipotong boleh menjadi “kenderaan” pemindahan patogen keracunan makanan. Maksudnya, kuman boleh berpindah daripada bawah kuku ke makanan melalui sentuhan yang kita rasa biasa. 

Dan bila kuku palsu, gel, extension, atau cat kuku yang menggelupas terlibat, risikonya makin meningkat. Kajian mendapati kuku tiruan lebih cenderung “menyimpan” patogen berbanding kuku asli, termasuk bakteria tertentu dan yis. 

Sebab itu rujukan keselamatan makanan seperti FDA Food Code letak standard jelas: kuku perlu dipotong, difail, dan dijaga supaya mudah dibersihkan. Cat kuku dan kuku palsu tidak dibenarkan semasa mengendalikan makanan terdedah kecuali jika memakai sarung tangan yang elok dan tidak koyak. 

Kuku pendek bukan soal cerewet. Ini soal amanah. Pelanggan bukan hanya beli rasa, mereka “serah” keselamatan pada tangan kita.

Kalau anda pengendali makanan, buat yang paling mudah hari ini:

potong kuku pendek dan kemas, gosok bawah kuku semasa basuh tangan, elakkan kuku palsu dan cat kuku bila pegang makanan terdedah, dan tukar sarung tangan bila kotor atau lama digunakan.

Makanan yang bersih bermula daripada perkara yang orang selalu tak nampak.
