A quick and easy lunch. Most ingredients from the garden!

Roti paratha bought from the supermarket.

Stir fried vegetables:
Capsicum
Carrots
Broccoli
Spinach
Snow peas
Garlic
Sesame seeds
Chopped coriander & parsley

Steak dressing:
3 tbspn soy sauce
1tsp brown sugar
1 tbspn sesame oil

Not even 2 months ago my partner decided to make this big ole garden. It’s about 500m2 and we have so many vegetables.

We have been cooking and eating as much as we can, sharing with family and even included our Kai during our family Christmas.

It’s been great having a Māra Kai (that’s Māori for vege garden) because it keeps us accountable and eating healthy!!!

If things spoil, it’s our own fault 😣

This is only the beginning for our Māra Kai, we’re so excited for more ventures in this area

Today we celebrate my father in laws birthday.

so from yesterday’s harvest I decided to make an appleberry and plum pie.

I don’t usually follow recipes because I just go by taste

I will point out that this isn’t the healthiest of recipes, but as I’ve said before, as long as you don’t eat this way too often. ITS OK!

Currently in Bali, and going from oats to rice for breakfast is abit different.

Rice will fill me up for a long time and I’m either going to have to be super active, or eat a lot less on this trip.

However,

I'm just wrapping up a 12-week program with one of my clients and I couldn't be happier with her results. When she first came to me, she had struggled to find someone who had studied Polycystic O***y Syndrome (PCOS), but she was pointed in my direction. Her primary focus was creating a healthier relationship with food - which if achieved would have far-reaching benefits. Justine signed up for my 12-week Nutrition and Training package; and although it wasn't an easy start in those early weeks, we pushed through together. The payoff has been tremendous as Justine's compound movements improved by 30%, but even more impressive is that her eating habits went from zero to hero! (you wouldn't believe it if i told you) Beginning timidly in the kitchen due to a lack of confidence and experience, over time she blossomed into cooking every evening. (My packages include recipes that are easy to make.) One thing stands out above all others though: Witnessing this once shy individual who used to doubt herself is now walking confidently into both gym AND kitchen without hesitation makes everything worthwhile – she is truly inspiring, and I cannot wait to see her flourish even more!!!

Here we have jam on toast, the jam was made by my partner who got sick of seeing mandarins fall from the tree and turn into green mould. (He also made cake, YUM)

We have a plan to be able to live off of the land as much as we can and in just a few short weeks we will be moving to a place with a whole orchid where we are able to make anything we want from the fruits and vegetables we grow ourselves… the place currently has endless amounts of citrus trees, avocados, tamarillos… you name it, it’s got it.

The aim of the game is to not let any of it go to waste, sell them and also make preserves AND sell THEM, and probably give to those who are in need.

I can’t wait to show you all the new place and the kinds of foods we will be able to create from it

Oats might be plain and basic. But it really is such a versatile and underestimated breakfast. Did you know that some people have it with avocado and tomatoes? 🤨 not my flavour, but it’s definitely some ones.

To be honest, there are times when I hate the thought of eating plain ol oats for breakfast, but then I think about how it’s so good for my days…. Slow releasing energy…. and FIBRE…. AND what fruits can I add to this breakfast… I will usually have about 3 different fruits in my breakfast. (Thats 3/5 fruit for the day DONE)… it’s such a great positive way to start my day

I know I just rambled. But I hope my little ramble triggered someone’s brain into tricking them of how they can also slip all different foods we need into our first dish of the day 🄰

Pai tō rātou rā (have a good day) and enjoy the sun while it’s here

While I write this, I actually have an exam to study for, but explaining my breakfast seemed more important 🤭
