Recipe of the month ⭐️⭐️
Spiced Apricot, Rocket & Feta Salad
⏱ Prep: 15 mins (+ cooling) | Cook: 5 mins
🍽 Serves 4–6
You’ll need:
• 2 Tbsp olive oil
• 1 garlic clove, crushed
• 1 tsp ground coriander
• 1 tsp ground cumin
• 8 just-ripe apricots, halved & stoned
• 75g baby rocket
• 1 long red chilli, deseeded & finely sliced
• 75g Greek feta, crumbled
• ⅓ cup roasted almonds, roughly chopped
• Extra virgin olive oil, to serve
• Salt & cracked pepper
Method:
1️⃣ Mix olive oil, garlic, coriander & cumin. Toss apricots through the spice mix and stand for 10 mins.
2️⃣ Heat a greased BBQ or char-grill to medium-high. Grill apricots for 2–3 mins each side until lightly charred. Set aside to cool.
3️⃣ Scatter apricots with rocket, chilli, feta & almonds. Drizzle with extra virgin olive oil, season, and serve.
