Simple and Delicious Harissa Salmon Pilaf
Ingredients:
2 tbsp olive oil
1 sliced onion
1 tsp each ground coriander and turmeric
2 tbsp harissa 500g cooked brown rice
2 salmon fillets, poached
40g chopped pistachios
70g pomegranate seeds
50g raisins
Bunch of parsley, chopped
Method:
Heat the oil in a casserole and add the onion to fry for 10 mins, or until golden. Stir in the spices and harissa paste, fry for 1 min, then stir in the rice and cook for 5 mins more. Flake the salmon and stir into the rice, then finish with the pomegranate, pistachios, nuts, and parsley. Easy peasy!
