Our products are traditionally fermented with salt using the natural yeasts and bacteria. Fermenting foods is a practice as old as humans themselves. Before modern food production every household would practice fermentation as a way of preserving the harvest and keeping food over non-productive winter months. All over the world traditional cultures innately knew how to improve food with the use of invisible microbes. Science is only just catching up with the innate wisdom of our ancestors. Marea first shared her passion for growing nutrient dense food, making great ferments and nourishing our families to health and wellness, through teaching others. Now you can also buy our GoodBugs online, at local markets or at selected stockists. Goodbugs a name which tells a huge story. Our microbiome contains more bacteria than all of our human cells. A harmonious balance between the different types of bacteria in our microbiome will determine the state of our health. Until recently, the roles of these 'billions of little helpers' that make up our microbiome was a vital, but underrated contributor to human health. Each jar of Goodbugs Zuurkool real sauerkraut is raw (unpasteurised) and alive with these life giving probiotics.

It's again! This week - 🥜✨ nut butter with a twist!

I’ve been making peanut and nut butters for years, but recently I discovered a kimchi-flavoured cashew butter recipe — and wow, it’s seriously tasty!

Ingredients:
½ cup cashews (or almonds)
1 tsp tamari
2 tsp sesame oil
1 tbsp tahini
¼ cup sunflower seeds
½ cup GoodBugs Kimchi
½ tsp maple syrup (optional)

Method:
Blend nuts and seeds into a smooth paste, then add the rest of the ingredients and blend until it reaches a creamy nut butter consistency.

Perfect for toast, crackers, or adding a punch of flavour to your meals! 🌱💛

Ferment at home - Fermented Ginger Carrots 🥕

There are many super simple ferments that you can make at home, without any fancy ingredients or equipment.

Whilst not as complex as sauerkraut and kimchi, This ferment only takes 3-4 days and can help you 'superise' the veges you have access to, whilst adding different lactic acid bacteria to your gut microbiome.

For this, a 500ml empty GoodBugs jar is the perfect size.

- Thinly slice or grate ~2 carrots to fill the jar 80%.
- Add a small nob of sliced fresh ginger or 1/4 tsp of powdered ginger.
- Make a brine by adding 1 tsp salt to a cup of water and stir until dissolved
- Pour the brine over the carrots until covered. (leave 20% head room in the jar)
- Put the lid on loosely and leave in a warmish place for 3-4 days.

You will notice C02 hissing out of the jar and a small amount of bubbling on the surface. This is good because it means that the lactic acid bacteria are multiplying and consuming the natural sugar in the carrots.

After 3-4 days you can refrigerate and enjoy as a condiment.

Tip: Carrots can be substituted for many other root vegetables like beetroot or radish.

We had a blast at the Napier Farmers Markets and couldn’t resist stopping by . Authentic New York vibes, real sourdough crust (a must for me!), and yes… this pizza even had sauerkraut on top! 🥬✨

Sourdough makes pizza a healthier indulgence, and adding fermented foods like sauerkraut is an easy way to boost your gut health while enjoying something delicious. Win-win!

Reposting this because although the weather has cleared, the effects haven’t. The clean-up for Tony at Pirongia Mountain Vegetables will be long, costly, and uncertain.

For the past six years, GoodBugs has relied on Pirongia Mountain Vegetables for our cabbages and garlic. Their spray-free, locally grown produce is part of what makes our ferments what they are. When they take a hit like this, it reaches far beyond the paddock.
