Aren't these Bunny π° Tail pancakes π₯ so cute ! Perfect for an Easter breakfast π£ or dessert treat (because our kids all need more sugar intake over this four day period right? π€ͺ).
Truth be told, I've borrowed this idea from the another website. Thanking you. π
However, I wanted to provide a healthier option that's gluten and dairy free and has less sugar involved. π
Now you may be thinking "oh it's Easter Melissa, who cares! π ". And that's totally fine.
But, you also may be thinking "I really would like us to indulge in a little less sugar craziness whilst still enjoying the festivities, thank you Melissa π€".....
And that's where I can help.
You can make these gorgeous Bunny Tail π° pancakes π₯ using the recipe listed below.

Pancakes:
Ingredients:
1/2 c almond meal
1/2 c tapioca or arrowroot flour (corn flour can be used too)
2 tbsp coconut flour
2 tsp baking powder (gluten free if needed)
2/3 c milk of your choice
2 eggs, whisked
1 tsp vinegar, I use apple cider vinegar
1 tbsp honey (or pure maple syrup if veganl
Method:
In a large bowl, combine dry ingredients.
In a separate bowl, combine wet ingredients.
Make a well in dry ingredients.
Pour wet ingredients into the well of the dry ingredients.
Mix dry ingredients into wet, slowly, until combined.
Pour around half a cup onto a hot greased pan, flip when bubbling.
