These are a great addition to any meat or vegetarian based meals or salads πŸ₯—. And the flavours are fantastic. So much so that my meat-inclined πŸ– family didn't even notice they were eating a vegetarian meal .

They come in several different flavours to choose from, are made with REAL food ingredients, don't contain any additives or preservatives etc and are made in NZ πŸ‘.

Running around, doing s**t πŸƒβ€β™€οΈ. It can take over our day sometimes, even in the weekends.

Drop kids here, shop there, clean that, organise this.

We can be on the go so much we easily forget to take a moment for ourselves. And before you know it, Monday has arrived.

It was something I was caught up in doing this morning. And it wasn't even 10am yet.😩

So, I decided to take some time out, sit in a cafe and order a delicious coffee β˜• that I could sit and enjoy in peace.

Just a wee bit of time for me in between the running around πŸ’•.

Where are some ways you can find some time for you in your busy day? πŸ€”. Remember, it's your weekend too.

** Crispy apple 🍏🍎 crumble in the crock pot /slow cooker - easy to make and healthier too!

FOR THE APPLE FILLING:

4-5 apples, thinly sliced (peel, if desired, but I don't)
1 tablespoon lemon juice πŸ‹ (or apple cider vinegar)
2 tablespoons pure maple syrup (or honey 🍯)
1 teaspoon ground cinnamon

FOR THE CRISP TOPPING:

Β½ cup almond meal/flour
2 tablespoons maple or pancake syrup (or honey 🍯)
1/2 teaspoon ground cinnamon
Optional: add ΒΎ cup pecans, chopped, or other nuts of choice. This helps to create the crispy topping too.

METHOD:

Add apples and lemon juice to a large mixing bowl, and toss to combine. Stir in the maple syrup and cinnamon until completely combined. If you're lazy like me you can just do this all in the slow cooker bowl.

Pour the mixture into the bowl of the slow cooker, and spread it out so that it is in an even layer.

Add all topping ingredients to a medium bowl. Stir ingredients until crumbles form. Evenly spoon mixture over apples.

** IMPORTANT!! Place a dish towel or a few paper towels on top of the slow cooker, and place the lid on top of the towel(s). This will help soak up the condensation that forms along the top of the lid, and keep the topping nice and crisp.

Cook on high for 3-4 hours, or on low for 6-8 hours until the apples are soft and cooked through.

Serve with full fat yoghurt or cream or ice cream. Enjoy! πŸ˜‹

Aren't these Bunny 🐰 Tail pancakes πŸ₯ž so cute ! Perfect for an Easter breakfast 🐣 or dessert treat (because our kids all need more sugar intake over this four day period right? πŸ€ͺ).

Truth be told, I've borrowed this idea from the another website. Thanking you. πŸ‘

However, I wanted to provide a healthier option that's gluten and dairy free and has less sugar involved. 😍

Now you may be thinking "oh it's Easter Melissa, who cares! πŸ™„ ". And that's totally fine.

But, you also may be thinking "I really would like us to indulge in a little less sugar craziness whilst still enjoying the festivities, thank you Melissa πŸ€”".....

And that's where I can help.

You can make these gorgeous Bunny Tail 🐰 pancakes πŸ₯ž using the recipe listed below.

Pancakes:

Ingredients:
1/2 c almond meal
1/2 c tapioca or arrowroot flour (corn flour can be used too)
2 tbsp coconut flour
2 tsp baking powder (gluten free if needed)
2/3 c milk of your choice
2 eggs, whisked
1 tsp vinegar, I use apple cider vinegar
1 tbsp honey (or pure maple syrup if veganl

Method:

In a large bowl, combine dry ingredients.

In a separate bowl, combine wet ingredients.

Make a well in dry ingredients.

Pour wet ingredients into the well of the dry ingredients.

Mix dry ingredients into wet, slowly, until combined.

Pour around half a cup onto a hot greased pan, flip when bubbling.
