Prep: 15 min | Total: 45 min | Makes: 12 - 14 balls
Ingredients:
· 1/2 cup dates (pitted), soaked & drained
· 1/4 cup pistachios, shelled
· 1/4 cup pumpkin seeds
· ½ cup raw cashews
· 1/4 cup shredded coconut
· 1 tsp spirulina
· 1 tsp matcha powder
· 30g Mitchells Unflavoured Protein Powder
· 1 tsp Mitchells Daily Greens Powder
· 1 tbsp coconut oil (melted)
Instructions:
1. Place the pitted dates in a small bowl and cover with warm water. Let them soak for 10–15 minutes to soften. Drain well before using.
2. In a food processor, add the pistachios, pumpkin seeds, cashews, sprinkle of matcha and shredded coconut.
3. Pulse until they break down into a coarse meal (small, crumbly pieces but not fully powdered). Set aside on small plate (for rolling).
4. Clean out food processor and add the drained dates, shredded coconut, spirulina, matcha powder, protein powder, Daily Greens powder, and melted coconut oil.
5. Process until the mixture becomes sticky and well combined, scraping down the sides as needed.
6. If the mixture is too dry, add a teaspoon of water or extra melted coconut oil to help bind it.
7. Scoop out small portions of the mixture (about 1 tablespoon each) and roll into balls using your hands.
8. Roll each ball in the prepared coating mixture, ensuring they are evenly covered.
9. If the mixture is too sticky, lightly dampen your hands with water.
10. Place the bliss balls on a baking tray or plate.
11. For a firmer texture, refrigerate for at least 30 minutes before serving.
