Fresh, full of flavour and so simplešš½
Courgette, smoked , feta and organic blackcurrants - looks fancy but comes together effortlessly.
Ingredients
⢠4 courgettes (green or yellow), ribboned
⢠20g salt
⢠20ml rapeseed or extra virgin olive oil
⢠100g Aoraki Smokehouse Cold Smoked Blackcurrant With Kamahi Honey Salmon
⢠80g feta
⢠Soft herbs (dill, parsley, marjoram)
⢠Freeze-dried blackcurrants
⢠Dried cornflowers
PurƩe
⢠400g courgettes
⢠1 ripe avocado
⢠2 small garlic cloves
⢠35ml rapeseed oil
⢠15g fresh marjoram (or 8g dried oregano)
⢠100ml cold vegetable stock
Method
Blend all purƩe ingredients until silky smooth.
Salt the courgette ribbons lightly, then toss through the purƩe.
Top with salmon, crumbled feta, herbs and freeze-dried blackcurrants. Finish with oil and flowers.
