Chimichurri sauce is an Argentinian classic dressing, we've finally got to the original recipe and it's tasting really good! Main ingredients are parsley, oregano, garlic, chilli, olive oil, and of course, love. It's as good on roast potatoes or grilled meat as it's on choripan (grilled sausage sandwich). You can also use it to marinate your veggies, your tofu, or to season your roast.

Autumn is officially here 🍂 !
In the southern hemisphere, the autumnal equinox (March) conventionally marks the beginning of autumn.

Did you know that a solar equinox is a moment in time when the Sun crosses the Earth's 🌎 equator, which is to say, appears directly above the equator ☀️ , rather than north or south of the equator. On this date, the center of the Sun spends a roughly equal amount of time above and below the horizon at every location on the Earth, so night and day are about the same length. This occurs twice each year, around 20 March and 23 September.

In the Southern Hemisphere, the March equinox is called the autumnal or fall equinox while the September equinox is called the vernal or spring equinox. During the year, equinoxes alternate with solstices. Leap years and other factors cause the dates of both events to vary slightly.

This was definitely not one of our best summers in NZ, but we are hoping for a sunny autumn ahead 🍂 ☀️ 🌊

Chimichurri Chicken Drumsticks with Roasted Figs
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients
8 chicken drumsticks
Salt and pepper, to taste
1/2 cup chimichurri sauce
12 fresh figs, halved
2 tbsp olive oil
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Steps
1. Preheat your oven to 375°F (190°C).
2. Season the chicken drumsticks with salt and pepper. Place them in a baking dish.
3. Arrange the figs around the chicken drumsticks in the baking dish. Drizzle olive oil over.
4. Bake for 35-40 minutes, or until the chicken is cooked through and the figs are soft and caramelized.
5. Remove from the oven and let cool for a few minutes before serving. Garnish with Chimichurri sauce and fresh herbs.

Argentina World Champ 2022 - There are no words that can express what it feels for us to be the winners again of the Futbol World Cup. Last time was in 1986.. Since then, we have always been cheering for this to happen again. Futbol is the main sport in Argentina, but it is not just a sport.. It is part of our culture, of who we are.. Every little town has a futbol field being constantly used, futbol means family, means friends, means getting together... means turning on the bbq and drinking fernet while we watch a game. There is a lot of passion involved, but when I say A LOT, I really mean A LOT... So much passion that makes everyone cry, evryone suffer.. As Argentinians, we feel like we were born to suffer.. the country has a huge economic crisis since forever, but, futbol gives us the light we need to keep going. Makes the 48M people get together and celebrate this life changing cup for us. Thanks to our MESIAS , you truly deserved this my friend, the victory with argentina 🇦🇷
