I am super grateful to have my parents nearby and the kids love days with grandma. However, our ideas on healthy food aren’t always aligned 😜. Sending a few healthy snacks helps chill my parental anxiety 😅.

Honestly? I nearly gave up on Vegan January this morning. I swore a lot, had a mini meltdown - then my family gobbled these pancakes and proclaimed them delicious. But man, they were hard to make!! So floppy, sticky, time consuming. If anyone has a good vegan gluten free pancake recipe please send it my way or tag me.

VEGANUARY || I’m really not into this type of thing but my husband suggested it. And if he’s wanting to eat more veggies then I’m up for the challenge. I mean, it’s school holidays, I have three children under 7 and we’re moving house so really I have nothing else to do 😜
So I’m going to post some of our meals, when I remember to photograph them. This was lunch yesterday - soup with red lentils, carrot, chard, coconut milk and cumin.
