I made the BEST summer salad, I saw the video on social media and thought…

🥗🧅🥬🍅🥒🥗🍋😍🫜

Red onions, thinly sliced, and pre soaked in abit of organic apple cider vinegar, sprinkled with sumac ( set aside to soften, and add at the end when mixing. 

Fresh mint - a good handful well chopped
Parsley - finely chopped
1 cucumber - chopped
Tomato - cubed
Lettuce, ( Cos lettuce is ideal or iceburg)
Radish -thinly sliced
Pomegranate - optional
Dressing - if you can find pomegranate molasses - even better. 

The dressing was just made on the go with heaps of lemons from a friend's tree, an uncontrolled amount of beautiful organic olive oil, celtic sea salt, and cloves of garlic, and more sumac for good measure. 

I promise you will love this, it’s a zesty and fresh, and absolutely not boring. 🥰
