Today was a hectic roadtrip kind of day!
Alot of set backs, screaming and laughter.
We didn’t get home until around 5.45pm and the boys were pretty exhausted/ctazy/hungry - a lot of emotions flying around.
This quick pasta really takes the pressure off those “mad evenings”.
I love using pulse pasta as it has alot of extra goodies compared with a plain wheat pasta.
Lots of fibre, protein and other goodies!
Here’s the recipe for you - I just made this up as I go, no measuring ingredients or anything fancy!
1 packet Pulse Pasta
1 good handful of chopped olives
2 - 3 heaped tablespoons of pesto
A glug of olive oil
Cook Pasta as instructed, mix it all together and there you have it! A quick and simple dinner for hungry kids (& parents).
