Eggplant Nuggets Recipe and procedures:
Gather the ingredients: two (or more) eggplants, breadcrumbs, cheese powder, vinegar, and water. Separate the egg and the combined breadcrumbs and cheese powder into different bowls. Ensure the eggplants are thoroughly washed before cooking.
Next, broil or grill the two eggplants over the stove. Allow them to cool for a few minutes before peeling off the charred outer layer.
Cut the eggplants into medium sized pieces.
Combine water and two cups of vinegar in a bowl. Place the eggplant pieces in the vinegar solution for two to three minutes.
Remove the eggplant pieces and place them on a separate clean plate. Coat each piece thoroughly with the breadcrumb and cheese powder mixture. (Single or double coating is acceptable.)
Heat a pan over low to medium heat. Fry the eggplant pieces until golden brown on both sides.
