Catechins are antioxidants that are thought to be responsible for many of the health-promoting qualities of green tea.

Unfortunately, catechins are relatively unstable in non-acidic environments, such as the intestines, and less than 20 percent of the total remains after digestion.

Research conducted at Purdue University found that citrus juices enable more of green tea's unique antioxidants to remain after digestion.

Catechins were also significantly more bioavailable in ready-to-drink products formulated with ascorbic acid (vitamin C).

Both vitamin C and citrus juices interact with catechins to reduce their breakdown in the intestines, but citrus juices were more powerful than could be explained by their vitamin C content alone.

The study showed lemon juice to be the most effective at protecting catechins, followed by orange, lime and grapefruit juices.

The Effect of Processing and Preparation on the Nutritional Content of Foods

Even if you eat a "perfect diet," are you sure you’re getting everything you think you are from your food?
It’s a good question, and one you probably haven’t asked recently—or maybe at all. How does freezing, cooking, drying, and reheating affect the nutritional content of food? What about grilling? Should you cook your vegetables, or eat them raw?

Many of the nutrients in foods you eat are affected in different ways by the method of storage, processing, preparation, and cooking. Did you know that you lose as much as 80 percent of the vitamin C content of a fruit when it is dried?

There are exceptions, too. Cooking improves the bioavailability of carotenoids from foods. Cooked carrots, spinach, mushrooms, asparagus, cabbage, peppers, and many other vegetables supply more nutrients than when they’re raw. That means you get more carotenoids and ferulic acid. However, it is also true that cooking destroys much of the vitamin C and polyphenol content.

Another important carotenoid, lycopene, is also more bioavailable when the food source is cooked and processed. Tomato paste contains much more usable lycopene than raw tomatoes. Broccoli provides more of certain healthy nutrients when cooked, and more of other healthy compounds when raw.

There isn’t a single best way to prepare, store, process, or cook your food. As always, it comes down to variety and moderation. The best way to ensure you harvest maximum benefits from your diet is to eat a variety of the recommended servings of fruits and vegetables no matter how they’re prepared. And the more ways you make them delicious and enticing to you, the more likely you are to eat fruits and vegetables.

Ang gallstones o bato sa apdo ay mga namuong deposits ng digestive fluid sa gall bladder. Ang gall bladder ay maliit na organ sa kanang bahagi ng tiyan sa ilalim ng atay. Ito ang nagsisilbing imbakan ng bile na kailangan para sa pagtunaw ng taba sa ating bituka.

Iba iba ang laki ng gall stones. Maaaring kasinlaki lang iton ng butil ng buhangin at maaari itong maging kasinlaki ng isang golf ball. Ang mga taong may gallstones at nakakaranas ng mga sintomas ay kadalasang kinakailangang sumailalim sa operasyon upang tanggaling ang apdo. Ngunit kung wala namang senyales at sintomas na nararamdaman ay hindi ito kailangang operahan.

Sintomas ng Gall Stones
Minsan ay walang sintomas na nararamdaman ang may mga gallstones. Ngunit kapag bumara ang gallstones sa mga ducts sa apdo ay maaari itong magdulot ng sintomas tulad ng:

1. Labis na pananakit ng tiyan na kahit anong gawing posisyon ay matindi pa rin ang sakit
2. Paninilaw ng balat at mga mata
3. Mataas ng lagnat at chills.

Mga Dahilan ng Pagkakaroon ng Gall Stones.
1. Ang iyong bile ay mayroong maraming cholesterol o taba. Kapag maraming taba sa bile na inilalabas ng atay ay maari itong mabuo na parang mga crystals at kalaunan ay maaring maging gall stone.
2. Maraming bilirubin sa iyong bile. Ang bilirubin ay kemikal sa katawan mula sa ating dugo. May mga sakit na nagdudulot ng maraming produksyon ng bilirubin sa atay tulad ng liver cirrhosis, biliary tract infection at mga sakit sa dugo.
3. Hindi nailalabas ng maayos ang bile sa iyong apdo. Magiging concentrated ang bile sa iyong apdo at ito ay maaaring madresulta sa pamumuo ng gallstones.

Mga Risk Factors sa Pagkakaroon ng Gall Stones.
1. Pagiging babae
2. 60 taong gulang o mas matanda pa
3. Katabaan o obesity, Pagbubuntis
4. High-fat diet
5. High cholesterol diet
6. Hindi pagkain ng fiber-rich food
7. Pagkakaroon ng gall stones ng mga kapamilya
8. Diabetes
9. Pag-inom ng gamot na may estrogen

Para maiwasan magkaroon ng gall stone, kumain sa tamang oras. Huwag mag-skip ng pagkain dahil ang hindi pagkain o fasting ay maaaring magdulot ng gall stone. Huwag biglaang magbawas ng timbang. Kung kailangang magpapayat, huwag bibiglain dahil nakakapagdulot din ito ng gall stone. Panatilihin ang tamang timbang.

Paano Ginagamot ang Gall stone?
Kapag wala namang matinding sakit na nararamdaman, kadalasang hindi tinatanggal ang apdo sa pamamagitan ng operasyon. Lifestyle changes at tinutunaw lamang ang mga gall stones sa pamamagitan ng gamot. Ngunit kung malala na ang gall stone at matinding sakit na ang idinudulot nito sa pasyente ay kailangan na itong operahan (laparoscopic cholecystectomy).
