Got inspired and developed my own version of “Costa Brava” / “Estrell’s”type chiffon cake with salted caramel frosting! It’s soft and fluffy, with a fine crumb, and most importantly, it’s moist, just as a chiffon cake is expected to be.
I’m planning to offer this in my bakeshop kitchen and will focus on this chiffon cake for the meantime. Chiffon is delicate and requires finesse when baking; I just need to improve my icing skills 😂

Sometimes, you really need to step out of your comfort zone.
I've always been at home in the hot kitchen because of its flexibility and creative freedom. Baking, however, is a whole different world. Its more techinical, precise, detailed oriented, and structured. It demands PATIENCE and a lot of hands-on work, especially with fondant. But after teaching this class, it was truly rewarding and fulfilling to see my students learn and apply the techniques. Baking may be challenging, but it's just as creative, innovative, and artistic in its own way. ☺️
