Lemon Herb Shrimp and Veggie Skillet

Ingredients:

- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 1 lemon, juiced and zested
- 1 tsp dried basil
- Salt and pepper to taste

Directions:

Step 1: Saute Shrimp
Heat olive oil in a skillet over medium heat. Add shrimp and garlic, cook until shrimp turn pink, about 2-3 minutes. Remove shrimp from pan and set aside.

Step 2: Cook Veggies
In the same skillet, add sliced bell peppers, zucchini, and cherry tomatoes. Cook until vegetables are tender, about 5-7 minutes.

Step 3: Combine
Return the cooked shrimp to the skillet with the veggies. Add lemon juice, lemon zest, dried basil, salt, and pepper. Stir well to combine.

Step 4: Simmer
Let the skillet simmer for another 2-3 minutes to allow the flavors to meld together.

Step 5: Serve
Serve the Lemon Herb Shrimp and Veggie Skillet hot, garnished with fresh herbs if desired.

Simple Shrimp, Asparagus, Stir-fry Recipe

Ingredients:

- 1 pound shrimp, peeled and deveined
- 1 pound asparagus, trimmed
- 1 cup cremini mushrooms, sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and freshly ground black pepper to taste

Instructions:
1. Heat olive oil in a large skillet or wok over medium-high heat.
2. Add garlic and cook for 30 seconds, or until fragrant.
3. Add shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from skillet and set aside.
4. Add asparagus and mushrooms to the skillet and cook for 5-7 minutes, or until tender-crisp.
5. Return shrimp to the skillet and stir to combine.
6. Season with salt and pepper to taste.
7. Serve immediately.

Optional additions: You could add a splash of white wine or chicken broth to the skillet for extra flavor, or a squeeze of lemon juice at the end. A sprinkle of red pepper flakes would add a touch of heat.
