🍪 Low Carb Shortbread Cookies – Easy Diabetic Recipe!

Try these buttery, crumbly shortbread cookies — made with almond flour and natural sweetener. They taste just like classic shortbread but are 100% diabetic-friendly!

Ingredients:
¾ cup erythritol or monk fruit sweetener
¼ cup salted butter (softened)
2 large eggs
1 tsp vanilla extract
2 cups blanched almond flour
Instructions:
1️⃣ Preheat oven to 350°F (180°C).
2️⃣ Beat butter + sweetener, then add eggs and vanilla.
3️⃣ Fold in almond flour to form dough.
4️⃣ Shape into cookies and bake 17–20 mins until golden.
