🌟 Main – Braised Pumpkin with Swiss Chard
Ingredients: Hokkaido, olive oil, maple syrup, soy sauce, lemon juice, water, curry leaves/rosemary, ginger cloves, cinnamon, bay leaves, Swiss chard, onion, methi seeds, cumin seeds, turmeric, peppercorns, ghee, coconut milk, nutmeg, lemon juice
Recipe:
Cook the paneer, strain, drain and dice
Preheat the oven (180°C)
Cut the pumpkin and place in a baking dish
Mix the marinade, pour over the pumpkin and bake for approx. 40 minutes
Cut the Swiss chard, Chop the onion, grate the ginger and grind the spices in a mortar
Fry everything in ghee
Sauté briefly, then add the Swiss chard leaves and stir in the coconut milk
Fold in the paneer
Serve with the braised pumpkin (you can also add pomegranate chutney)
