If it was liver, it would probably be off the chart!
As I shared in one of my last posts, nutrient density, nutrient bioavailability & low toxic load are the nutritional holy trinity for integral health & fitness.
Here we have a comparison by nutrient density of Beef vs. Beans.
What is not mentioned here is that 1. Beans have a lower DIAAS (Digestible Indispensable Amino Acid Score) than Beef (meaning that Nutrient Bioavailability is lower) & that Beans are loaded with antinutrients that come with a bitter nutritional aftertaste, as these (i.e. Oxalates, Phytates, Lectins, Goitrogens, etc.) might inhibit nutrient absorption or contribute to mineral loss.
I want to thank & for the great job with the Sacred Cow book & all these great slides that illustrate so well that eating meat is socially, ecologically, ethically & economically healthy.
