Prawns 🍤 Pulav
Easy and satiating meal🤩
1/4 kg Prawns 🍤
1 cup Basamati Rice
1 big onion 🧅 thinly sliced
1 medium size tomato 🍅
1 spoon ginger garlic paste
2 green chilies 🌶
1 tsp caraway seeds
1 bay leaf
1 black cardamom
1 inch cinnamon stick
1 tbsp fish Biryani masala or any other fish curry masala
Konkam juice if available.
Few mint leaves
And a handful of coriander

Clean and marinate prawns in salt, turmeric and lemon Juice. Heat oil in a pot add all whole masalas(caraway seeds, black cardamom, bay leaf, Cinnamon stick) add green chilies, thinly sliced onions sauté till translucent add ginger garlic paste after a minute add chopped tomatoes and sauté the mixture for few minutes till raw smell goes off. Add masala and then prawns and Sauté and then cover and cook for couple of minutes till raw smell of prawns goes away. Add washed and soaked rice to this and give it a stir. Adjust salt and spice as per the taste. Add kokum juice if available. Add few mint leaves and some chopped coriander and add hot water, double of rice quantity or as per requirement. Cover it and cook for 15 mins by continuously stirring in between. Garnish with coriander and mint leaves.
And your prawns pulav is ready to attack. Aroma while cooking does the trick😇

My undying love for mangoes sometimes go to the extent that I want to indulge in to every possible mango recipe. I love this yellow fever every summer 🤗 I wish to be surrounded by mango yellow, mangoes and mango recipes every summer. That makes my summer cool😎💛

Amrakhand:

I used:
1kg curd to make hung curd,
Sugar as per taste
Pinch of salt
Pulp of 2 mangoes
Cardamom powder 1/4 tsp
Few strands of saffron

Whisk hung curd, sugar, salt, cardamom powder, safron together and form a creamy consistency. Our shrikhand is ready.

Take pulp of two mangoes and pulse it on mixer to make a smooth texture.
In a nonstick pan heat the pulp continuesly stiring till it thickens. This also enhances the color and flavor of mango. Let it cool down, then add this to our shrikhand and whisk again. Our silky, smoothy amrakhand is ready to relish

Garnish with the nuts of your choice😊

Dahi wada a refreshing delight onset of summer😋❤️😊

Vada recipe:
1 cup Urad daal soaked in water for 5 to 6 hours and grinded to a little coarse paste by using very little water.
Added salt, ginger, garlic and green chili paste. Fried vada till golden brown. Soaked in cold water for some time then squeezed and shifted to another bowl.

Dahi recipe:
Whisked curd for creamy consistency then added salt, sugar, remaining ginger, garlic and chilli paste, Chaat masala. Creamy and smooth curd is ready to merge with spongy vadas..

You may garnish it with the chutneys of your choice but bsence of it doesn't decrease the taste...

This lockdown has given ample time to us to reflect on our lives. After I was done with my life it was my kitchen's turn.🤪

There are many temptations when we visit a supermarket. Many untraded ways allure us. Fancy diets, sudden realization of our malnutrition, attractive offers, many recipes on our wishlist contribute to our shopping list which suddenly protracts in the supermarket and we end up shopping many items for our Pantry decorations.
Now since I am done with reflecting on my life I decided to reflect on my pantry and found many such ingredients. On the auspicious occasion of Akshay Tritiya I decided to convert my pantry into Akshay Patra.
First one to come out were these sattu flour and cornflakes.
Sattu & Cornflakes laddoo

Sattu flour is kind of preroasted so doesn't take much time.

Roasted sattu flour with little ghee and added crushed cornflakes for a little crunch. When the mixture reached to luke warm temperature added sugar and cardamom powder to it and rolled the laddos.

Super easy, super crunchy, super tasty laddoos are ready to eat. They last for around 15 days.
