This morning I had no ideea what to make for breakfast, I wanted something light, yum and a bit proteic. Yeah...I know!Pancakes? Proteic?! What was I thinking?! Well I wasn’t, I just let instinct take its course. Without knowing I got the eggs and greek yogurt out of the fridge, I saw the rice flour and something clicked. Pancake time!
Pancakes Ingredients:
✅ 2 eggs
✅ 4 tablespoons rice flour
✅ 150g greek yogurt
✅ 1 teaspoon baking soda
✅ 1 teaspoon baking powder
✅ 1 tablespoon apple cider vinegar
✅ 1 teaspoon vanilla extract
✅ 1 pinch of salt.
Pancakes Cooking Method:
1. Take one goooood pan, I use a granite one. And let it heat up at low heat.
2. In a bowl mix the yogurt and eggs.
3. Add the rice flour in and mix until it is smooth.
4. Add the baking soda and baking powder, pour over them the apple cider vinegar. You’ll see bubbles!! Mix those bubbles in easily.
5. Add in the salt and the vanilla.
6. When the pan is heated up( make sure it is hot hot), with a spoon add it to the pan and cook at low heat, with the lid on until the pancakes are not jiggly any more, they should be a tad brown and fluffy, turn and cook for another 30 seconds, lid on. You will need patience for the fluffiness, it is worthwhile.
Now for the proteic and sweet touch, mix 200g cheese ( I’m using Pilos cream cheese, it has 11g of proteins per 100g), 2 tablespoons of agave syrup, a teaspoon of vanilla extract and the juice of half a lime.
